I'd like to cook on the weekends, especially for my husband since I eat about 75% raw food and he doesn't. What are some good recipes I can cook on the weekend and then freeze in single portion size so its easy for me or him to reheat it? Halbut Baked with Tomato Fennel Sauce for the Freezer
Servings: 6
Ingredients: 1 1/2 pounds halibut filets
Sauce:
1 tablespoon olive oil
2-3 garlic cloves, minced
3/4 cup chopped fresh fennel, white part of bulb only
3/4 cup chopped onion
1 can (14 1/2 ounces) diced tomatoes, undrained
1/3 cup red wine
1/4 teaspoon crushed red pepper (more if you like things hot)
salt and pepper to taste
Instructions: Preheat oven to 375掳 F. Prepare side dish, such as rice or couscous, if desired.
Prepare sauce by heating olive oil in a large saut茅 pan. Add garlic, fennel and onion and saut茅 until soft, but not brown, about 5-7 minutes. Add diced tomatoes and red wine. Simmer sauce for about 20 minutes. Let cool completely.
Divide side dish vegetable between six freezer containers. Lay fish fillet on bed of rice, couscous or other vegetable. Divide the sauce over the six containers, pouring over the fish. Cook in oven for 10 minutes. Cool, wrap properly and freeze.
When you're ready to eat dinner, here's how to cook your fish:
Conventional Oven: Preheat oven to 350掳F and place baking dish on a cookie sheet. Bake, covered for 20 minutes, remove cover and continue cooking until heated through and fish flakes with a fork -- about 10-15 more minutes.
Microwave Oven: Microwave on high for 5-7 minutes or until fully cooked. Let stand for 1-2 minutes in microwave oven before serving
French Bread Pizzas for the Freezer
Ingredients: Per Pizza:
1/3 cup pizza sauce
6 slices low fat beef and turkey pepperoni
2 tablespoons grated mozzarella cheese
1 teaspoon grated Parmesan cheese
one half long French roll
Instructions: Cut each roll in half. Spread 1/3 cup sauce over the cut side of each roll, sprinkle with grated cheeses and top with pepperoni and other desired optional toppings. Wrap each pizza tightly in foil or other freezer wrap of choice and freeze.
When you're ready to eat dinner, here's how to cook your pizzas:
Conventional Oven: Preheat oven to 350掳F and place unwrapped pizza on a baking sheet. Bake for about 20-25 minutes or until heated through and cheese is melted.
Microwave Oven: I like this recipe best when cooked in a conventional oven, as it's difficult, if not impossible to get a crisp crust in the microwave (maybe you have better luck with browning trays then I). But if you must cook in the microwave, 2 1/2 to 3 minutes on high usually does the trick.
Spaghetti and Meatballs
Servings: 8
Ingredients: Meatballs:
1 pound ground beef
3/4 pound ground pork
3 cloves garlic, minced
2 handfuls of bread crumbs
2 tablespoons dried basil
2-3 handfuls of freshly grated Parmesan cheese
2 eggs
salt and pepper to taste
Sauce:
1 tablespoon olive oil
1 small onion, chopped
1-2 cloves garlic, minced
2 cans (6 ounces each) tomato paste
1 can (15 ounces) tomato sauce
6 tomato paste cans (36 ounces) water
salt and pepper
2 tablespoons dried basil
1 tablespoon dried oregano
1/2 cup freshly grated Parmesan cheese
spaghetti pasta
Instructions: For Meatballs
Mix all ingredients together in a bowl. Use hands to thoroughly mix everything together. Form meatballs, approximately 1 1/2'; in diameter, by rolling between your palms. If meat mixture is too wet or sticky, add more bread crumbs to the mix. Makes 35-40 meatballs.
For Sauce
Heat oil, onion and garlic. Carefully remove garlic and onion and put in large saucepan. Add water, tomato sauce and tomato paste to garlic and onion. Mix well. Add basil, oregano, and salt and pepper to taste. Add Parmesan cheese and bring to a boil. Reduce heat and simmer. Makes enough sauce for two family size servings (family size = 4 adults or 2 adults and 4 children with leftovers).
The Meal
Bring sauce and meatballs to a boil over medium-high heat. Reduce heat to low and simmer for 90 minutes. Meatballs can be simmered as long as 3 hours, the longer they are simmered the better. Fifteen minutes before meatballs are done, cook spaghetti noodles according to package directions. Remove meatballs with a slotted spoon and place in a warm serving dish; set aside. When noodles are done, drain and rinse according to package directions. Pour noodles into serving bowl and toss with a couple of handfuls of freshly grated Parmesan cheese. This adds not only a wonderful flavor to your spaghetti, but it also helps hold the sauce on the noodles. Add enough sauce to coat but do not make your spaghetti swim! Any pasta dish, such as lasagna or macaroni and cheese, are excellent from the freezer to the microwave. You can make a whole pan, let it cool and cut individual portions, wrap in plastic wrap and then foil. I place the individual portions in a gallon freezer bag labeled with the contents. You can do the same with things like soups and stews, put them in the right size container, take it out the night before and set it in the fridge, he can microwave it for 2-3 minutes and eat it with bread and maybe a salad.

fillings for burritos-just mix up tofu/soy mince or meat if need be with veggies, seasoning, tomato puree etc, leave in the fridge and cupboard for him tortilla wraps and cheese and tell him all he needs to do is defrost and heat the filling, add it to tortilla wraps, top with cheese and heat again
veggie burgers or nuts roasts-made out of vegetables, nuts, soy protein, tofu, quorn...various ingredients... fully cook in oven then tell him to microwave and put in a bun/bap with a little lettuce and sauce like BBQ, ketchup, relish etc.... and some frozen chips, would be hard for him to bake these! or potato wedgies. You could roast your own and freeze for him to microwave if you don't like store bought stuff.

Anyone know any good recipes for chicken and dumplings?
I am having trouble finding a good recipe for chicken and dumplings. Any input would be greatly appreciated.Anyone know any good recipes for chicken and dumplings?
INGREDIENTS
1 (4 pound) whole chicken
3 cups water
3 cubes chicken bouillon
1 pinch poultry seasoning
1 pinch dried thyme
1 dash garlic powder
1 pinch dried sage
1/8 teaspoon salt
1/8 teaspoon ground black pepper
1 onion, chopped
1 1/2 cups chopped celery
1 cup chopped carrots
2 potatoes, cubed
1/4 cup chopped green bell pepper
1/4 cup chopped tomatoes
1 (10.75 ounce) can condensed chicken broth
2 tablespoons all-purpose flour
salt and pepper to taste
2 cups buttermilk baking mix
1/8 teaspoon chopped fresh parsley
1/4 teaspoon ground black pepper
1 cup milk
DIRECTIONS
In a large pot over medium high heat, combine the chicken, water, bouillon, poultry seasoning, thyme, garlic powder, sage and salt and pepper. Bring to a boil, reduce heat to low and allow to simmer. Add the onion, celery, carrots, potatoes, green bell pepper and tomatoes, cover pot and allow to simmer for one hour, or until vegetables are tender and chicken is done.
In a separate small bowl, combine the flour, buttermilk baking mix, parsley, ground black pepper and milk. Mix together well and form into little balls. Drop these balls into the simmering soup. Simmer for 5 more minutes.

Classic Chicken and Dumplings Stew:

For dumplings, combine biscuit mix and basil in a bowl. Stir in milk with a fork until moistened. Drop by tablespoon onto casserole; (makes about 12 dumplings). Bake, uncovered at 350 for 30 minutes. Cover and bake 10 more minutes or until dumplings are done. 6-8 servings.
I make my chicken and dumplings the easy way and they are really good. First I boil my chicken breasts in a large pot. Take the chicken out and debone it. Cut it into bite sized pieces and put it back into the boiling water. Next I add a stick of butter, salt, pepper, and a little milk. Get that boiling again. Next take the really cheap canned biscuits and cut each one into 4ths. Drop the biscuit pieces into the boiling mixture and cook until they are done. You can tell because they go from being white to a deeper beige color. With this recipe if you find that all your dumplings are gone you can always go back and add more biscuits. Hope you like it. My whole family loves them.

Is there a good substitute for onions and garlic in recipes?
I absolutely can not eat onions or garlic (even small amounts) because of an intestinal problem. My daughter loves these and she gets frustrated when she cooks for me because she must leave them out. Would there be some other ingredients that could add this type of flavor to a dish? Or something that would enhance the dish at least?Is there a good substitute for onions and garlic in recipes?

This recipe isn't quick but it really is great. Basically just toss everything in a crock pot and let it cook for a few hours.
Beef Stew
2 lbs. stew beef
2 potatoes
2 ears of corn
1/4 C chopped onion
2 carrots
3/4 C celery
2 beef buillon cubes
1 zucchini squash
3/4 C flour
salt
pepper
paprika
In small amounts slightlly brown the beef in oil until all meat has been browned. Dissolve two buillon cubes in 4 cups boiling water. Deglaze pan with a bit of broth and add to pre prepared broth. Wash and chop all vegetables. Add all vegetables except potatoes to crock pot. Add beef on top. Top with potatoes and pour in broth. Mix in seasonings to taste. Cook on high for 4 hours. Towards the end of the cooking time taste the meat and see if you need to add more seasonings. First tear apart the meat to make sure its cooked though.Anyone got some good recipes for me?

HASH BROWN CASSEROLE
1-32 oz. bag ore Ida hash browns
戮 cu melted butter
陆 cup chopped onion
1 can cream of chicken soup delicious
1 cup sour cream

Use 陆 cup butter %26amp; cook onions until tender. Mix onion %26amp; butter, potatoes (thawed), soup, sour cream, %26amp; cheese. Pour into casserole. Bake 1 陆 hr. at 325 degrees. Covered with foil for 1 hour then remove. Add corn flakes mixed with 录 cup. Margarine over top %26amp; bake remaining 陆 hour.
HOME-STYLE MACARONI AND CHEESE
Vegetable oil cooking spray
8 oz. elbow macaroni
Salt (optional), for cooking macaroni
1 container (10 oz.) refrigerated alfredo-style pasta sauce
1 package (12 oz.; 3 cups) pre-shredded sharp cheddar cheese
1 tbsp. olive oil
1 cup coarse bread crumbs
1. Preheat the oven to 375 degrees.
2. Lightly mist an 11-by-7 inch glass or ceramic baking dish with vegetable oil cooking spray and set it aside.
3. Bring a large pot of water to a boil over high heat. Add salt, if using, and stir in the macaroni. Reduce the heat to medium-high and cook the macaroni uncovered, until al dente, about 8 minutes. Reserve 1 cup of the pasta cooking water, then drain the macaroni well in a colander, shaking it a few times to remove any water that might still cling to the pasta.
4. Transfer the macaroni to the prepared baking dish. Add the pasta sauce, 2 cups of the cheese, and the reserved pasta cooking water, and stir until the ingredients are well combined. Scatter the remaining 1 cup of cheese over the top.
5. In a small bowl, toss the olive oil with the bread crumbs, and then scatter them on top of the cheese.
6. Bake until the macaroni and cheese is bubble and the bread crumbs are lightly browned, 25 to 30 minutes. Serve at once.
This is my favorite. We double the ingredients for the sauce to add to the spaghetti side we have: Chicken Marsala
Ingredients:
olive oil
4 thin chicken breast cutlets
2 oz. low salt bacon cut into 1/4 inch pieces
1/2 c. flour
coarse salt
ground pepper
1/2 cup dry marsala wine
4 T. heavy cream
minced fresh flat-leaf parsley
Coat a large skillet with olive oil and set over medium heat. Add bacon and cook just until crisp and lightly browned. Remove with slotted spoon and set aside. Leave fat in pan.
Pour flour on a plate. Pat cutlets dry. Season lightly with salt and pepper, then dredge in flour.
Heat pan with bacon fat over medium heat. Add a touch more olive oil if necessary to make approximately 2 Tablespoons. When fat is hot, shake excess flour off cutlets and place in pan. Saute, turning once until browned on both sides. Think cutlets should only take a few minutes per side. Remove cutlets. Pour excess fat from pan. With pan over medium heat, add Marsala and scrape browned bits from the bottom of the pan. Cook Marsala until it is reduced by one quarter.
Stir in cream and simmer until you get a nicely thickened sauce. Return the chicken and bacon to the pan and turn the cutlets to coat and reheat for a minute. Serve with sauce on top with sprinkling of parsley.

This recipe isn't quick but it really is great. Basically just toss everything in a crock pot and let it cook for a few hours.
Beef Stew
2 lbs. stew beef
2 potatoes
2 ears of corn
1/4 C chopped onion
2 carrots
3/4 C celery
2 beef buillon cubes
1 zucchini squash
3/4 C flour
salt
pepper
paprika
In small amounts slightlly brown the beef in oil until all meat has been browned. Dissolve two buillon cubes in 4 cups boiling water. Deglaze pan with a bit of broth and add to pre prepared broth. Wash and chop all vegetables. Add all vegetables except potatoes to crock pot. Add beef on top. Top with potatoes and pour in broth. Mix in seasonings to taste. Cook on high for 4 hours. Towards the end of the cooking time taste the meat and see if you need to add more seasonings. First tear apart the meat to make sure its cooked though.Anyone got some good recipes for me?

HASH BROWN CASSEROLE
1-32 oz. bag ore Ida hash browns
戮 cu melted butter
陆 cup chopped onion
1 can cream of chicken soup delicious
1 cup sour cream
1 cup grated cheddar cheese
2 cups corn flakes crushed
Use 陆 cup butter %26amp; cook onions until tender. Mix onion %26amp; butter, potatoes (thawed), soup, sour cream, %26amp; cheese. Pour into casserole. Bake 1 陆 hr. at 325 degrees. Covered with foil for 1 hour then remove. Add corn flakes mixed with 录 cup. Margarine over top %26amp; bake remaining 陆 hour.
HOME-STYLE MACARONI AND CHEESE
Vegetable oil cooking spray
8 oz. elbow macaroni
Salt (optional), for cooking macaroni
1 container (10 oz.) refrigerated alfredo-style pasta sauce
1 package (12 oz.; 3 cups) pre-shredded sharp cheddar cheese
1 tbsp. olive oil
1 cup coarse bread crumbs
1. Preheat the oven to 375 degrees.
2. Lightly mist an 11-by-7 inch glass or ceramic baking dish with vegetable oil cooking spray and set it aside.
3. Bring a large pot of water to a boil over high heat. Add salt, if using, and stir in the macaroni. Reduce the heat to medium-high and cook the macaroni uncovered, until al dente, about 8 minutes. Reserve 1 cup of the pasta cooking water, then drain the macaroni well in a colander, shaking it a few times to remove any water that might still cling to the pasta.
4. Transfer the macaroni to the prepared baking dish. Add the pasta sauce, 2 cups of the cheese, and the reserved pasta cooking water, and stir until the ingredients are well combined. Scatter the remaining 1 cup of cheese over the top.
5. In a small bowl, toss the olive oil with the bread crumbs, and then scatter them on top of the cheese.
6. Bake until the macaroni and cheese is bubble and the bread crumbs are lightly browned, 25 to 30 minutes. Serve at once.
This is my favorite. We double the ingredients for the sauce to add to the spaghetti side we have: Chicken Marsala
Ingredients:
olive oil
4 thin chicken breast cutlets
2 oz. low salt bacon cut into 1/4 inch pieces
1/2 c. flour
coarse salt
ground pepper
1/2 cup dry marsala wine
4 T. heavy cream
minced fresh flat-leaf parsley
Coat a large skillet with olive oil and set over medium heat. Add bacon and cook just until crisp and lightly browned. Remove with slotted spoon and set aside. Leave fat in pan.
Pour flour on a plate. Pat cutlets dry. Season lightly with salt and pepper, then dredge in flour.
Heat pan with bacon fat over medium heat. Add a touch more olive oil if necessary to make approximately 2 Tablespoons. When fat is hot, shake excess flour off cutlets and place in pan. Saute, turning once until browned on both sides. Think cutlets should only take a few minutes per side. Remove cutlets. Pour excess fat from pan. With pan over medium heat, add Marsala and scrape browned bits from the bottom of the pan. Cook Marsala until it is reduced by one quarter.
Stir in cream and simmer until you get a nicely thickened sauce. Return the chicken and bacon to the pan and turn the cutlets to coat and reheat for a minute. Serve with sauce on top with sprinkling of parsley.

Here are a couple different ideas
MEXICAN HAMBURGERS (CHULETAS)
Salsa Fria:
1 10 oz can diced tomatoes with green chiles
1 tablespoon olive oil
1 tablespoon wine vinegar

2 cups Saltines, finely crushed
3 tablespoons fresh parsley, chopped
1 cup Vidalia onions, chopped
1/2 tsp garlic powder (not salt)
1 lb ground chuck (beef)
1 egg
1 tsp salt
1 tsp chili powder
1 cup oil (for frying)
Garnish:
Rings of red onion, slices of avocado, sour cream and sprigs of cilantro
Combine all Salsa Fria ingredients. Refrigerate for at least one hour.
On a sheet of wax paper, evenly spread cracker crumbs. Combine parsley, onions, ground meat, garlic powder, egg, chili powder and salt in a small bowl. Form 4 patties and coat each pattie with the cracker crumbs evenly. Cover and refrigerate for at least 1 hour (but no more than 3 hours) to thoroughly chill.
Heat oil until it is hot enough to brown a 1 inch cube of bread in a little over 1 minute. (Don't get oil too hot or center of patties won't cook through). Fry patties in oil well browned on outside and cooked through. Drain on paper towels.
Serve on a bed of iceberg lettuce with a few rings of red onion, topped with Salsa Fria and with a dollop of sour cream with a sprig of cilantro to the side and a slice of avocado.

1 loaf French bread
1 onion, chopped
3 cloves garlic, minced

1 can condensed cream of mushroom soup

Carve top in a circle (leaving a ';cap'; that you will replace on top later) out of French bread and hollow out the middle. Break up the bread innards into small pieces and set aside in a medium bowl.
To these bread crumbs, add the browned hamburger mixture, condensed cream of mushroom soup, and seasonings to taste.
Mix ingredients well and restuff this mixture back into French bread shell.
Top with cheese and replace the top (hopefully you saved it).

I'm a mom on a tight budget so...
1 lb. Hamb.

I flatten the biscuits with the base of my palm. Be careful not
to go too thin. Place a tbl or so of the mix in the middle and sprinkle cheese. Fold like you are making a taco and pinch sides together. If soup touches sides the biscuit wont seal. Bake as directed for biscuits. You can use your imagination w/ these. I've done ham and scrambled egg w/ cheese and all sorts of stuff. My kids like them on the go. Good luck.

1 small onion, finely diced
2 c. tomato juice
1 pkg. McCormick's Taco Seasoning
1 can black beans, drained and rinsed
1 can sweet corn, drained
2 c. shredded mozzarella cheese
sour cream
sliced black olives
chopped green onions
Prepare the macaroni according to the package instructions.
(Note: Do not rinse the noodles. The starch left on them helps bind the goulash so it doesn't get too runny.)
Saut茅 the sirloin and onion in a skillet until the meat is brown and the onions become translucent.
Drain the fat off. Add tomato juice and the taco seasoning to the meat. Bring to a boil then reduce heat, cover, and simmer for about 10 min.
In a large pot, combine the noodles, meat mixture, corn, beans, and shredded cheese. Allow this to simmer for about 20 minutes or until heated through and the cheese is melted. You may need to add up to a cup more of the tomato juice if it's too dry.
To serve: place a helping of goulash on a plate then garnish with sour cream, black olives, and green onions. It's nice to set the garnishes on the table as when serving tacos. Don't be afraid to use whatever garnishes you'd use on a taco. Some like green peppers, jalape帽os, salsa, fresh diced tomatoes, crushed tortilla chips, cheddar cheese. Get creative!

1 1/2 T. butter
Saute onions and garlic in butter until translucent and set aside. Mix beef in bowl with:

Form mixture into 6 patties and saute in pan with 1 T. butter until golden brown on both sides. Set aside in a casserole dish. Patties should still be pink inside.
Add 1 lb. sliced mushrooms to pan and quickly saute about 4 minutes. Set aside.
Melt 2 T. butter in pan and add 3 T. flour. Cook 1 minute and whisk in 1 1/2 C. beef broth. Add mushrooms and pour over patties in casserole.
Bake at 350掳F. for 30 minutes.
Serves 6

Various chips and dips or salsas, crackers and cheese. Take a brick of cream cheese dump a jar of seafood sauce on it and a drained can of baby shrimp and serve with crackers. You could do a taco dip layering cream cheese spread on a pan topped with re-fried beans and layer lettuce sour cream, tomatoes, onions, lettuce and taco sauce and serve with tortilla chips.
The great thing about doing various appetizers is first that everyone is bound to find something they like, and second they are fun. Guest can mingle and much. And you said it's a party!!What are some good recipes to feed a party of 40 to 50 people?

If you're doing this yourself it's just as important that you can do something on a large scale in your kitchen as it is that you don't stress yourself out completely in doing it.
Sometimes catering is the best way to go in these affairs, and that way too you can pick one or two things from the catering menu and ask your guests what they'd prefer. The caterer's can either deliver the food to you beforehand and you can serve it yourself, or they can deliver it after and help in serving and cleanup. That way you have less stress and can spend more time enjoying the party.
Decide on how many courses you are going to have, make sure you take into account anyone that might be vegetarian, lactose intolerant or who doesn't eat red meat. Soup and Salad are always a good bet for side dishes and appetizers are always great to have as well.
Most importantly, have fun with it. A stressed host/hostess does not a good party make. So whether you decide to cook or cater, it's less important what to make as it is to make sure everyone is happy with the choices.

Texas Oven-Roasted Beef Brisket
2 Tbsp chili powder
2 Tbsp salt
1 Tbsp garlic powder
1 Tbsp onion powder
1 Tbsp ground black pepper
1 Tbsp sugar
2 tsp. dry mustard
1 bay leaf, crushed
4 pounds beef brisket, trimmed
1陆 cups beef stock
Preheat the oven to 350潞F. Trim brisket of majority of excess fat. Do not remove all fat (yet).
Make a dry rub by combining first 8 ingredients. Season the raw brisket on both sides with the rub. Place in a roasting pan and roast, uncovered, for 1 hour.
Add beef stock and enough water to yield about 1/2 inch of liquid in the roasting pan. Lower oven to 300潞F, cover pan tightly and continue cooking for 3 hours, or until fork-tender. Remove brisket to cutting board w/ juice wells or to a large platter and allow to rest under aluminum foil for about 20 minutes before carving.
Now trim the fat off, and slice meat thinly across the grain. Top with strained juices from the pan.

Gruyere Potato Gratin
1 pound large red potatoes
3/4 cup coarsely grated Gruyere (about 3 ounces)
1 large egg
3/4 cup milk, heated just to boiling
Salt and freshly ground black pepper
Preheat oven to 400潞F. Butter a 1-quart gratin or shallow baking dish.
Bring a large saucepan of salted water to a boil. Peel potatoes and cut into thin slices (about 1/8-inch thick). Add potatoes to boiling water and parcook 4 minutes. Drain potatoes well in a colander.
In gratin or baking dish, arrange potatoes, overlapping them, in 3 layers, sprinkling first 2 layers each with 1/4 cup Gruyere and salt and pepper, to taste.
In a small bowl whisk egg and add hot milk in a stream, stirring constantly. Season mixture with salt and pepper and pour evenly over potatoes. Sprinkle the potatoes with remaining 1/4 cup cheese and bake until top is golden and potatoes are tender, about 30 minutes.

Big Fat Greek Salad
1 head romaine lettuce- rinsed, dried and chopped
1 red onion, thinly sliced
1 (6 ounce) can pitted black olives
1 green bell pepper, chopped
1 red bell pepper, chopped
2 large tomatoes, chopped
1 cucumber, sliced
1 cup crumbled feta cheese
6 tablespoons olive oil
1 teaspoon dried oregano
1 lemon, juiced
ground black pepper to taste
In a large salad bowl, combine the Romaine, onion, olives, bell peppers, tomatoes, cucumber and cheese.
Whisk together the olive oil, oregano, lemon juice and black pepper. Pour dressing over salad, toss and serve.

Slow cook some roast beef (10-12 lbs) and then when it is all cooked shred it and add BBQ sauce! Serve with buns, chips, and pasta salad.

I love allrecipes.com. The site provide a box to change the number of servings and then adjusts the ingredients. You will first need to decide if it is sit down or buffet type. If you use paper plates and plastic silverware, they need to be sturdy. Remember that if you are serving hot foods, they have to be kept warm before they are put on buffet serving dishes. Cold dishes (mayo based salads, dips) need to be kept cold. I put them in a bowls that will be consumed within an hour then place the bowl of food in a larger bowl of ice. Texas Oven-Roasted Beef Brisket
2 Tbsp chili powder
2 Tbsp salt
1 Tbsp garlic powder
1 Tbsp onion powder
1 Tbsp ground black pepper
1 Tbsp sugar
2 tsp. dry mustard
1 bay leaf, crushed
4 pounds beef brisket, trimmed
1陆 cups beef stock
Preheat the oven to 350潞F. Trim brisket of majority of excess fat. Do not remove all fat (yet).
Make a dry rub by combining first 8 ingredients. Season the raw brisket on both sides with the rub. Place in a roasting pan and roast, uncovered, for 1 hour.
Add beef stock and enough water to yield about 1/2 inch of liquid in the roasting pan. Lower oven to 300潞F, cover pan tightly and continue cooking for 3 hours, or until fork-tender. Remove brisket to cutting board w/ juice wells or to a large platter and allow to rest under aluminum foil for about 20 minutes before carving.
Now trim the fat off, and slice meat thinly across the grain. Top with strained juices from the pan.

Gruyere Potato Gratin
1 pound large red potatoes
3/4 cup coarsely grated Gruyere (about 3 ounces)
1 large egg
3/4 cup milk, heated just to boiling
Salt and freshly ground black pepper
Preheat oven to 400潞F. Butter a 1-quart gratin or shallow baking dish.
Bring a large saucepan of salted water to a boil. Peel potatoes and cut into thin slices (about 1/8-inch thick). Add potatoes to boiling water and parcook 4 minutes. Drain potatoes well in a colander.
In gratin or baking dish, arrange potatoes, overlapping them, in 3 layers, sprinkling first 2 layers each with 1/4 cup Gruyere and salt and pepper, to taste.
In a small bowl whisk egg and add hot milk in a stream, stirring constantly. Season mixture with salt and pepper and pour evenly over potatoes. Sprinkle the potatoes with remaining 1/4 cup cheese and bake until top is golden and potatoes are tender, about 30 minutes.

Big Fat Greek Salad
1 head romaine lettuce- rinsed, dried and chopped
1 red onion, thinly sliced
1 (6 ounce) can pitted black olives
1 green bell pepper, chopped
1 red bell pepper, chopped
2 large tomatoes, chopped
1 cucumber, sliced
1 cup crumbled feta cheese
6 tablespoons olive oil
1 teaspoon dried oregano
1 lemon, juiced
ground black pepper to taste
In a large salad bowl, combine the Romaine, onion, olives, bell peppers, tomatoes, cucumber and cheese.
Whisk together the olive oil, oregano, lemon juice and black pepper. Pour dressing over salad, toss and serve.

Slow cook some roast beef (10-12 lbs) and then when it is all cooked shred it and add BBQ sauce! Serve with buns, chips, and pasta salad.
Pasta Bar(lasagna, spaghetti, salad, garlic bread), A fiesta (tacos, burritos, salad), A sandwich platter or super sub (about $40 for a sandwich big enough and you can serve chips, dips and punch), Wraps (veggie, turkey, roast beef with chips and beverage) All of these are pretty simple and feed a crowd well - then again you could always serve fried chicken, potato salad, green salad and beverage. I love allrecipes.com. The site provide a box to change the number of servings and then adjusts the ingredients. You will first need to decide if it is sit down or buffet type. If you use paper plates and plastic silverware, they need to be sturdy. Remember that if you are serving hot foods, they have to be kept warm before they are put on buffet serving dishes. Cold dishes (mayo based salads, dips) need to be kept cold. I put them in a bowls that will be consumed within an hour then place the bowl of food in a larger bowl of ice. Directions:
Sprits non stick fry/saute pan with olive oil. Saute shallots/onions for 2 minutes. Add Garlic and saute for 1 more minute. Add Portobello mushrooms, Balsamic vinegar, thyme ( this is Great with fresh thyme) and basil. Lower heat and cover pan. Cook for 7-12 minutes until mushrooms have turned a brownish color and become flexible. If the pan gets dry you can add a splash of water, broth, or red wine.
Berry Vanilla Parfait - South Beach Diet Recipe (Phase 2)
3 large strawberries
1/4 cup blueberries (frozen,but defrosted works great)
3/4 cup lowfat sugar free vanilla pudding
1/4 cup uncle sam cereal (this almost has a granola thing going on)
1 tbls. fat free cool whip
Layer strawberries cut up on the bottom of a tall glass. (may need some sugar substitute if strawberries arent sweet enough)

3. You can either marinade in this for 30 min if you have time, or just bake in a 375 * oven in the dressing for 30 minutes.

Put water in kettle,enough to cover bags,
Use a zip-lock sandwich bag,

add shredded cheese,ham,onions,green pepper,hash browns,salt and pepper, etc. whatever you like in your omelets, mix and pour into a bag ,put bag,or bags into the boiling water and boil for 13 minutes,then open bag and it will roll out onto you plate,very good.Any breakfast recipes that kids can make by them selves?

You can also add a slice of American cheese on top, or what ever kind of cheese you like.
why not mix up eggs and take nestle quik chocolate and put a tablespoon in the eggs and some sugar and dip bread in..and then put in warm pan on the stove have older sibling help you and you have chocoalte french toast!!!!!!!!!!!

2 cups flour
2 cups sugar
2tsp. soda
1 tsp salt
3 eggs
1 large can fruit cocktail (undrained)

Cream butter, add sugar, beaten egg yolks and vanilla. Add dry ingredients alternately with water or milk. Lastly, add stiffly beaten egg whites.
In the pan you will bake the cake in (a large round cast iron skillet works well) melt 1/2 cup butter and 3/4 cup brown sugar.
When the butter and sugar becomes melted and syrupy, add slices of pineapple with maraschino cherries in the middle. Pour on batter.
Bake at 325掳F for about 35 minutes or until the cake springs back when touched lightly near center. Remove from oven, loosen cake gently from sides of pan and turn upside down onto a serving plate.
Serve with a sauce of your choice (such as cherry sauce, rum sauce, or whipped cream.

grilled eggplant is very good just marinade it in some balsamic vinegar and spices

You could make vegetable kabobs with zuccini, onion, tomato, mushrooms, peppers, etc.
They're really easy ... you just buy the kabob sticks and cut the veggies into chunks. Slide a variety of veggies onto each stick. Grill until they're hot and cooked to the crunchiness you like. You can serve it with a dip or sauce if you want too.

what about vegitable kabobs
grilled eggplant is very good just marinade it in some balsamic vinegar and spices
same with portobello mushrooms
You could make vegetable kabobs with zuccini, onion, tomato, mushrooms, peppers, etc.
They're really easy ... you just buy the kabob sticks and cut the veggies into chunks. Slide a variety of veggies onto each stick. Grill until they're hot and cooked to the crunchiness you like. You can serve it with a dip or sauce if you want too.

When I make granola, I use rolled oats. Granola can have a variety of nuts in it, like almonds, pecans, walnuts, and shredded coconut. And now there are so many different dried fruits in the market..like dried cranberries, blueberries, strawberries, etc (but add them after baking, or they become too hard and chewy).
I've made this recipe several times. It tastes amazing on icecream, yogurt, or in a bowl with milk:
****Granola****
3 cups rolled oats
1 cup slivered almonds
1 cup cashews
3/4 cup shredded sweet coconut
1/4 cup plus 2 tablespoons dark brown sugar
1/4 cup plus 2 tablespoons maple syrup
1/4 cup vegetable oil
3/4 teaspoon salt
1 cup raisins
Preheat oven to 250 degrees F.
In a large bowl, combine the oats, nuts, coconut, and brown sugar.
In a separate bowl, combine maple syrup, oil, and salt. Combine both mixtures and pour onto 2 sheet pans. Cook for 1 hour and 15 minutes, stirring every 15 minutes to achieve an even color.

The type of custard used is most likely confectioners custard which is thick and sweet, unlike the runny home-made custard kind. Here is a recipe:
For the confectioner's custard (creme patissiere)
570ml Milk
1 vanilla pod
6 egg yolks
120g caster sugar
30g Flour, sieved
30g cornflour
570ml double cream, whipped
Pour the milk into a medium saucepan. Split the vanilla pod lengthwise and scrape out the seeds into the pan. Scald the milk, take off the heat and allow to steep for at least half an hour.
Beat the egg yolks and sugar until very pale. Mix in the flours. Stir in the milk and pour back into the pan.
Bring gently to the boil, stirring continuously and continue cooking until the mixture has thickened and the flour is fully cooked out. Pass through a sieve and leave to cool.
Once cooled, beat in the double cream until the custard is smooth and unctuous.
This is the recipe you need. Enjoy!

Easy breakfast recipes that can be made the night before?
I am looking for a variety of easy breakfast type recipes that can be made the night before and heated in the morning. I lead a morning bible study at my church and to encourage attendance I feed the dedicated souls that attend each week. I hate to serve the same thing every Sunday and am looking for ideas. 1 green pepper chopped
1 red pepper chopped

1 package of smokee links chopped

Press the rolls into a baking dish and spread the chopped peppers and onion, links, and shredded cheese on top. Let sit in fridge overnight covered.
In the morning beat eggs and milk and pour into baking dish. Add salt and pepper and bake @ 350 for 45-60 min. The quiche is done when its not wiggley in the middle.
Super yummy and easy breakfast,

INGREDIENTS:
5 cups flour
15 oz. box bran flakes cereal with raisins
3 cups sugar
2 tsp. baking soda
1 tsp. salt
4 eggs, beaten
1 cup vegetable oil
4 cups buttermilk
PREPARATION:
Combine flour, cereal, sugar, baking soda and salt in a large mixing bowl. Mix well to combine. Add beaten eggs, oil and buttermilk and stir just until dry ingredients are moistened.
Cover bowl tightly with waxed paper and foil.
You should chill this batter in refrigerator for at least 24 hours before using. The batter will keep, tightly covered, in the refrigerator for up to 3 weeks.
When you're ready to bake the muffins, preheat the oven to 400 degrees and line muffin pans with paper liners. Scoop batter into prepared muffin cups, filling each cup 2/3 full. Bake at 400 degrees for 15 to 20 minutes, or until a toothpick inserted into the center of a muffin comes out clean and the tops spring back when touched lightly with fingertip. Makes 48 muffins.

1 pound spicy pork sausage
4 eggs
2 1/4 cups milk
1 (10.75 ounce) can condensed cream of mushroom soup
1 (10 ounce) package frozen chopped spinach - thawed, drained and squeezed dry
1 (4.5 ounce) can mushrooms, drained and chopped
1 cup shredded sharp Cheddar cheese
1 cup shredded Monterey Jack cheese
1/4 teaspoon dry mustard
2 sprigs fresh parsley, for garnish
DIRECTIONS
Spread croutons on bottom of greased 9x13 inch baking dish. Crumble sausage into medium skillet. Cook over medium heat until browned, stirring occasionally. Drain off any drippings. Spread sausage over croutons.
In a large bowl, whisk together eggs and milk until well blended. Stir in soup, spinach, mushrooms, cheeses and mustard. Pour egg mixture over sausage and croutons. Refrigerate overnight.
The next morning, preheat oven to 325 degrees F (165 degrees C).
Bake in preheated oven for 50 to 55 minutes or until set and lightly browned on top. Garnish with parsley sprigs and serve hot.
HASH BROWNS BREAKFAST CASSEROLE
3 c. croutons
1 1/2 c. bulk sausage, browned and drained
2 c. milk
1 can cream of mushroom soup
2 lb. bag frozen hash brown potatoes, thawed
2 c. sharp Cheddar cheese, shredded
4 eggs, well beaten
3/4 tsp. dry mustard
1/2 c. milk
Place croutons in 9 x 13 inch pan. Top with 1 1/2 cups of cheese and the sausage. Cover with mixture of eggs, milk and mustard. Refrigerate overnight. Mix mushroom soup with milk and pour over the top. Cover the potatoes and top with 1/2 cup cheese. Bake at 300 degrees for 1 1/2 hours or at 325 degrees for 1 hour.
I agree with Amanda who knows make ahead breakfast dishes better than a Bed and Breakfast

How about Ziploc Omelettes?
The best part is that no one has to wait for their special omelet !!!
Have guests write their name on a quart-size Ziploc freezer bag with permanent marker.
Crack 2 eggs (large or extra-large) into the bag (not more than 2) shake to combine them.
Put out a variety of ingredients such as: cheeses, ham, onion, green pepper, tomato, hash browns, salsa, etc.
Each guest adds prepared ingredients of choice to their bag and shake. Make sure to get the air out of the bag and zip it up.
Place the bags into rolling, boiling water for exactly 13 minutes. You can usually cook 6-8 omelets in a large pot. For more, make another pot of boiling water.
Open the bags and the omelet will roll out easily. Be prepared for everyone to be amazed.
Nice to serve with fresh fruit and coffee cake; everyone gets involved in the process and a great conversation piece.

Why is it that you want to save them ONLINE? Wouldn't it be easier to just save them to your computer. I save mine as Word documents and have folders for different categories. The website I use most often to find recipes is www.AllRecipes.com , you can save any of their recipes in what they call My All Recipes where there is a Recipe Box. You can print them in several sizes (e.g. 3'; x 5';) an adjust them for the number of servings you desire. Note however, that the recipes are saved via cookies on your computer -- so if you delete the All Recipes cookies, you will also delete them from your recipe box.

BARBECUED TOFU
* 1 pound extra firm tofu, well pressed and sliced into 3/4 inch rectangles
* 3/4 cup barbeque sauce
* 3/4 cup brown sugar
* 1 tsp chili powder
* 1/2 tsp red pepper flakes
* 3/4 cup orange juice concentrate
* salt and pepper to taste
PREPARATION:
Whisk together the barbecue sauce, sugar, chili powder, pepper and orange juice over medium low heat until well combined, about 3 minutes.
Place the barbecue sauce mixture in a wide flat dish, and place the tofu in the sauce, coating both sides well.

* 1 eggplant, sliced into 3/4 inch thick pieces
* 2 tbsp olive oil
* 1 tsp fresh chopped basil
* 1 tsp rosemary
PREPARATION:
Brush both sides of the eggplant with olive oil and sprinkle with the herbs, pressing if necessary to get the herbs to stick.

* 1/2 cup tequila
* 1/4 cup margarine, softened
* 3 tbsp olive oil
* 1/4 cup lime juice
* 5 cloves garlic, minced
* 4 portobella mushroom caps
PREPARATION:
Whisk together the tequila, margarine, olive oil, lime juice and garlic. Allow to sit 10 minutes.
Baste the mushrooms with the tequila mixture, then place on grill.

3 small (about 6 ounces each) zucchini, cut diagonally into 1-inch chunks
3 small (about 6 ounces each) yellow summer squash, cut diagonally into 1-inch chunks
6 plum tomatoes, about 1 1/4 pounds, each cut lengthwise in half
1 tablespoon(s) brown sugar
1 tablespoon(s) balsamic vinaigrette dressing
1/2 teaspoon(s) salt
1/8 teaspoon(s) ground black pepper
1/8 teaspoon(s) ground cinnamon
3 tablespoon(s) olive oil
3/4 cup(s) (loosely packed) fresh basil leaves, thinly sliced
DIRECTIONS\
1. Onto 6 long metal skewers, alternately thread zucchini chunks, yellow-squash chunks, and tomato halves, leaving about 1/8 inch space between each vegetable piece to allow even cooking. (Threading zucchini and squash through skin side gives vegetables more stability on skewers.)
2. In cup, combine brown sugar, vinegar, salt, pepper, cinnamon, and 2 tablespoons olive oil. Brush kabobs with remaining 1 tablespoon olive oil.
3. Place kabobs on grill over medium heat; cook 15 to 20 minutes, until vegetables are browned and tender. Turn kabobs occasionally and brush vegetables with some vinaigrette during last 3 minutes of cooking.
4. To serve, arrange kabobs on large platter; drizzle with any remaining vinaigrette and sprinkle with basil.

You could make vegetable kabobs with zuccini, onion, tomato, mushrooms, peppers, etc.
They're really easy ... you just buy the kabob sticks and cut the veggies into chunks. Slide a variety of veggies onto each stick. Grill until they're hot and cooked to the crunchiness you like. You can serve it with a dip or sauce if you want too.

I am finding it hard to find recipes for bread [and cake but to a lesser degree] that do not contain any grain product. There are many unleavened recipes. If most receips call for an X sized baking tin what size would i need if i want to halve recipes? Im in UK (not sure if US have different sizes)

You'll see a lot of references in the US to 9 inch or 8 inch round tins for the layered cakes.

Mix a large box of any red jello( cherry is best.add 1 cup of hot boiling water and mix well. Add a 20 can of crushed pineapple, juice and all
and 1 can of cherry pie filling. mix all this together well. Put in fridge and let it set until firm. You can eat it as is or add cool whip or whipped cream to the top. I like it plain. Delish with turkey!!!
Hi since you already have the turkey, try Betty Crockers; garlic mashed potatoes, also the yam bake, Stove Tops; turkey dressing, McCormick even has the turkey gravy,(did this for Thanksgiving, quick and taste great, NOT LIKE HOMEMADE BUT CLOSE) Just add some of the juices frome the turkey dripping to the stuffing mix %26amp; gravy, and no one will know it package. You can also stuff your turkey with the stuffing. Hope this helps!!! Dont for get to open a can of cranberry's and make a large salad with the works(cucumbers, radish, tomatoes, ect)
Basil Goat Cheese Pizza
Ingredients-
1 (1 pound) loaf frozen white bread dough, thawed
1 tablespoon olive oil
salt to taste
1/2 teaspoon ground black pepper
1 sprig fresh basil, chopped
1 1/2 teaspoons minced fresh rosemary
3/4 cup Italian tomato sauce
4 ounces crumbled goat cheese
2 sprigs fresh basil, chopped
Preparation-
Allow dough to rise in a covered bowl until doubled in bulk.
Preheat oven to 425 degrees F (220 degrees C).
Roll the dough on a floured surface into a 15-inch circle. Roll the edges towards the center to form a crust, leaving a 12-inch circle. Brush the entire crust generously with olive oil, and sprinkle with salt, pepper, 1 sprig of chopped basil, and rosemary. Bake in preheated oven until the crust begins to turn golden, 8 to 10 minutes.
Spread the crust with tomato sauce. Sprinkle with 2 sprigs of chopped basil and goat cheese. Bake in preheated oven until the crust is brown, and the pizza has heated through, about 8 more minutes.
