Sometimes I get hungry for something a little more wholesome than microwave meals and instant noodles, and I don't like spending so much money eating out at restaurants. ';Campbell's One-Dish Chicken and Rice Bake'; - Serves 4
1 (10 3/4 oz.) can cream of mushroom soup
1 cup water
3/4 cup uncooked regular white rice
1/4 tsp. paprika
1/4 tsp. pepper
4 skinless, boneless chicken breast halves
In 2-quart shallow baking dish mix soup, water, rice, paprika and pepper. Place chicken on rice mixture; sprinkle with additional paprika and pepper. Cover; bake at 375* - 45 minutes or until chicken and rice are done.
';';Perfect Fried Chicken'; - 2 servings
1/3 cup all-purpose flour
1 tsp. salt
1 tsp. paprika
1/4 tsp. pepper
1 (2 to 2 1/2 lb.) broiler-fryer chicken; cut up
Combine flour and seasonings in paper or plastic bag; add 2 or 3 pieces of chicken at a time and shake. Heat shortening (1/4'; deep in skillet) until a drop of water sizzles.
Brown meaty pieces first; then add others (don't crowd). Turn pieces once. When lightly browned, 15-20 minutes, reduce heat; cover tightly. (If cover isn't tight, add 1 tbsp. water.) Cook until tender, 30-40 minutes. Uncover last 10 minutes.
(Note: For extra crustiness, add 1/2 cup fine dry bread crumbs to flour for the coating.)
';Turkey Leg Pot Roast'; - 6 to 8 servings
3-pound turkey leg
2 tbsp. oil
1 cup water
1 onion; cut in slices
4-5 potatoes; peeled and cut in half
4-5 carrots; scrubbed and cut in 2'; pieces
1/4 cup flour
1/2 tsp. salt
1/4 tsp. pepper
Mix flour, salt and pepper; use to coat turkey leg.
Heat oil over medium heat in large heavy skillet; brown turkey and onion in oil.
Drain off fat, if necessary; add water. Bring to a boil; turn heat to low. Cover skillet and cook about 1 1/2 hours. Add water during cooking to prevent skillet from going dry or leg from sticking.
Add potatoes and carrots; cook about 1 hour more or until potatoes are tender.
';Parmesan Crusted Chicken'; - 4 servings
1/2 cup mayonnaise
1/4 cup grated Parmesan cheese
4 boneless, skinless chicken breast halves
4 tsp. Italian-seasoned dry bread crumbs
Combine mayonnaise and cheese; spread on chicken. Sprinkle with bread crumbs. Bake at 425* - 20 minutes or until thoroughly cooked.
';Garlic-Mushroom Rib Eyes'; - 4 servings
4 boneless rib eye steaks (1'; thick)
1/4 tsp. pepper
1/8 tsp. salt
4 tbsp. butter; divided
4-8 garlic cloves; peeled and sliced
1 lb. sliced fresh mushrooms
3 tbsp. beef broth
Sprinkle steaks with pepper and salt. In a large skillet, melt 1 tbsp. butter. Cook steaks 2 minutes on each side or until desired doneness; remove and keep warm.
In the same skillet, cook the garlic in 1 tbsp. butter for 2 minutes. Remove garlic; set aside. Add mushrooms and remaining butter to skillet; saute for 5 minutes. Stir in the broth. Bring to a boil; cook and stir over high heat until liquid is absorbed. Add reserved garlic. Serve over steaks.
';Deli Beef Sub with Tomato-Pepper Relish';
16 oz. thinly-sliced deli roast beef
1 loaf (1 pound) Vienna (french) bread; unsliced
2 tbsp. prepared Italian dressing
6 leaves Boston lettuce
6 slices provolone cheese
TOMATO-PEPPER RELISH:
1 cup seeded, chopped tomato
1/2 cup finely chopped green bell pepper
1/2 cup finely chopped onion
3 tbsp. prepared Italian dressing
In medium bowl, combine relish ingredients; set aside.
Cut bread lengthwise in half; lightly drizzle 2 tbsp. dressing over bottom half of loaf. Line with lettuce; layer with cheese. Arrange beef over cheese; top with relish.
Close sandwich with top half of loaf; cut crosswise into 8 portions. Serve immediately.
';Burgundy Beef Pasta'; - 4 servings
8 oz. linguini noodles
1 lb. top sirloin; very thinly sliced
2 cloves garlic; minced
1/2 tsp. thyme
2 tsp. oil
1/4 lb. mushrooms; sliced
1 (14 1/2 oz.) can Del Monte Original-Style Stewed Tomatoes
1 (8 oz.) can Del Monte Tomato Sauce
3/4 cup dry red wine (can substitute beef broth or water)
Cook pasta as package directs; drain. Saute meat, garlic and thyme in hot oil 3 minutes. Add mushrooms; cook 1 minute. Add tomatoes, tomato sauce and wine. Cook, uncovered, over medium heat 15 minutes, stirring occasionally. Serve over pasta. Garnish with chopped parsley, if desired.
';Creamy Ham 'n' Macaroni'; - 6 servings
2 cups uncooked elbow macaroni
1/4 cup butter; cubed
1/4 cup all-purpose flour
2 cups milk
4 tsp. chicken bouillon granules
1/4 tsp. pepper
2 cups (8 oz.) shredded cheddar cheese; divided
1 1/2 cups cubed fully cooked ham
1/4 cup grated Parmesan cheese
Cook macaroni according to package directions; drain and set aside. In a large saucepan, melt butter over low heat; whisk in flour until smooth. Whisk in the milk, bouillon and pepper. Bring to a boil; cook and stir for 2 minutes or until thickened. Remove from the heat. Stir in 1 cup cheddar cheese, ham, Parmesan cheese and macaroni.
Transfer to a greased 2-quart baking dish; sprinkle with remaining cheddar cheese. Bake, uncovered, at 350* for 20-25 minutes or until bubbly. Let stand 5 minutes before serving.
In all honesty, sign up for a cooking mag like Bon Appetit or Quick Cooking. They made a huge change in my life when I was a bachelorette. Especially Quick Cooking gives you 5 ingredient meals and most use prepared food like canned soups or such from the store. It's a great way to learn cooking!
BAKED TROUT
500g small new potatoes halved
3 tablespoons olive oil
3/4 teaspoon salt
1/2 teaspoon dried rosemary
3 baby marrows, quartered length ways
350g firm, ripe, red tomatoes, diced but not peeled or cored
4 whole rainbow trout, cleaned and deboned
1 lemon, thinly sliced
Preheat oven to 230 degrees Celsius
Place the potatoes in an ungreased baking tin and sprinkle with 1 1/2 tablespoons of oil, 1/4 teaspoon of salt, and the rosemary.
Bake uncovered for 15 minutes, shaking the pan after 7 minutes.
Add the baby marrows, tomatoes, another 1/2 tablespoon of the oil and 1/4 teaspoon of salt and bake uncovered for 7 minutes longer.
Sprinkle the fish with the remaining salt and lay lemon slices inside each.
Arrange the fish on top of the vegetables, drizzle with the remaining oil, and bake uncovered for 15 minutes.
If you like chicken breast, there is an easy one:
Pick up a boneless chicken breast and cut each half in half to make two steaks, season them with salt and garlic pasta and add a little lemon juice (you can keep it in the fridge before you decide to cook it). In a refratary dish ointed with butter, place your chicken breast, cover with cream cheese and add on top some potato crisps. Add small pieces of butter on top. Take to the oven for about one hour.
While the chicken is in the oven, you can make a green salad with lettuce, arrugula, sliced cucumber, grated carrots, slices of tomato. Mix olive oil and a little vinegar and salt (you can also add some mustard seeds), and dress the salad. You can drink juice or white wine with your meal.

Get a copy of The Four Ingredient cookbook. There's even a section on healthy/low fat recipes. Pasta is very versatile. You can add fresh ingredients - tomatoes, mozzarella, herbs (basil) and chicken etc. Buy a whole chicken, as it is less expensive than packaged, roast it, and add to other dishes. A homemade pizza is healthier and less expensive than takeout -- and you can add fresh ingredients/toppings. A slow cooker is inexpensive, and you can make a roast with potatoes, carrots, onions %26amp; still have leftovers to make sandwiches or fill tacos.
Keep a well-stocked pantry i.e. various dry pastas, rice, couscous, soup, olives, mushrooms, tuna, salmon, herbs/spices (only the ones you use most often), tomatoes, tomato sauce, -- when fresh ingreds are not always available/handy.
yes get a box of Velveeta cheese shells, ground hamburger and pizza sauce, cook the shells add cheese brown hamburger and add pizza sauce, top with mozzarella cheese and through in the oven till the cheese is melted its easy and taste good my kids and husband love it. there are also a couple of recipes on the back of the box (that's were i got it I just don't add all the other crap).

also you know that they do make complete dinners it is so simple all you do is through it all in a pan and bake it.
Boxed meals like hamburger helper and Homestyle bakes are pretty good. Most packages of food have a recipe on them nowadays. Even if it is detailed, the directions are pretty straightforward. It may seem like a lot but if you throw yourself in there and have fun and realize that nobody's life depends on your culinary skill, it may free you up to get your hands dirty and you might realize that you are a pretty good cook.

Brown up some chicken pieces, put them in a baking pan, put a can of peaches- juice and all over them. Cover it with foil or a lid. Bake at 350 degrees for 1 hour. Serve with anything as side dishes.
As girly as it might sound, try watching cooking shows. My wife and I frequently watch Food Network and pick up little tips and tricks from each show. There are even shows tailored for the harried and busy lifestyle that we all seem to have these days...and some even focused on the bachelor! Check them out, you might be surprised.
Besides, some of the hosts are pretty cute. :D

Ginger Peach Oatmeal
- Brew up a a strong batch of ginger tea (I let mine sit overnight)
- When you cook your oatmeal in the morning, instead of using water, use the ginger tea to infuse the ginger flavour into your oatmeal.
- After it's cooked, add some chopped canned peaches before serving with milk.
- If you want more of a ginger flavour, consider adding some diced pieces of candied or sugared ginger.

I love chicken! So, this easy chicken recipe is great. You can always omit the broccoli if you don't like it, or add another veggie in its place. Just cook up some instant rice,add a can of condensed cream of chicken soup, a little cheddar cheese, some frozen broccoli florets(I pre-cook my broccoli so I don't have to bake the dish as long) and pre-cooked chicken pieces. ( I buy the frozen Tyson chicken chunks. They're really convenient when I'm in a pinch). Then throw it all in a crock pot or the oven for a little bit until it's all heated through. Everything is pre-cooked, so you could even microwave it if you're in a hurry. If you like a little spice, you could add a pinch of cayenne pepper to the rice mixture before cooking. It's great! Very easy one hear.....This will searve about 4 so you will need to adjust or just have plenty of leftovers...
1 can cr. of mushroom
1 cup sour cream
5 cups of cooked white rice
1 can green beans
1 lb of ground beef....
Brown the beef and drain....mix everything up in a casarole dish or cake pan and bake until hot.
Another simple one....
1lb gound beef
1 can pork and beans
1 can tomatoe soup..
Brown and drain beef......put back into skillet....add beans and tomatoe soup....also add a little garlic, salt and pepper....when its hot its done...eat over a slice of bread....
