INGREDIENTS
3 heads cabbage, cored
1 cup apple cider vinegar
3 cups water
1 1/2 cups long grain rice
5 pounds ground beef
1 (16 ounce) package bulk pork sausage
1/4 cup diced onion
4 teaspoons salt
1 1/2 teaspoons garlic salt
1 teaspoon fresh-ground black pepper
1 (16 ounce) jar sauerkraut, drained and pureed
DIRECTIONS
Place cabbages in a large stockpot filled halfway with water; add vinegar. Cover and steam over low heat until leaves are tender, 1 to 1 1/2 hours. Remove cabbages, reserving vinegar cooking water. Rinse with cold water to chill the cabbage, then separate the leaves.
Meanwhile, bring 3 cups water and rice to a boil in a saucepan over high heat, then reduce heat to low, cover, and simmer until the rice is tender, about 20 minutes. Remove from heat and fluff with a fork; set aside to cool.
Heat a large skillet over medium heat. Brown the ground beef and sausage with the onion, salt, garlic salt, and pepper, 7 to 10 minutes. Drain and set aside to cool.
Preheat oven to 325 degrees F (165 degrees C). Cover the bottom of a large roasting pan with a single layer of cabbage leaves.
Prepare the filling by stirring together the rice, cooked meat, and sauerkraut until well blended. Place 1/3 cup of filling into each leaf and roll into a cylinder, tucking in the ends as you roll it up. Place the rolls into the roasting pan. Pour in enough of the cooking liquid from the cabbage to come halfway up the sides of the rolls. Cover pan with a tight fitting lid or aluminum foil.
Bake in preheated oven for 1 1/2 hours. Serve warm or at room temperature.

How about making some sandwhiches. Make the sausage into patties. Sautee them up. Then add sliced onions and peppers in the same pan and add just a touch of sauce. Top the meat with this and a slice of provalone. Put on a hard roll. Serve with a garden salad.
I crumble up sausage, brown it and drain it, add some minced onion, garlic and capers with some crushed red pepper, basil and oregano, add a can of crushed tomatoes, spices and a splash of red wine. Cook up some penne pasta, toss it with some of the sauce and serve with extra sauce on top. Garnish with some fresh parmesan reggiano and chopped italian parsley. You can add lots of variations depending on what you like! Good olives, sun dried tomatoes, artichoke hearts, fresh mozzerella balls......
mix it with some turkey (ground) or ground beef and make a good meatloaf mix out of it..you can even freeze it to use later

Italian Zucchini and Sausage Casserole:
1lb bulk sausage
2 cups sliced zucchini (about 3 medium)
1 small onion chopped
8oz shredded mozzarella cheese
1 egg beaten
2 tsp italian seasoning
1 tsp garlic powder
1 tsp black pepper
2 tsp yellow mustard
1 pkg refrigerated crescent rolls
Heat oven to 350. In skillet brown sausage (drain grease). Add zucchini, onion, italian seasoning, garlic powder, black pepper, and saute until tender. While that is cooking in a 9x11 or 9x13 rectangle baking dish press crescent rolls on bottom and sides to form a crust. Spread mustard all over crust. In a bowl mix the cheese and the beaten egg then add to sausage mixture until well blended. Pour mixture into crust and bake for 20-30 minutes or until top is browned and casserole is set. Cut into squares and enjoy by itself or serve with a salad.
