I just bought an enameled cast iron dutch oven. Does anyone have any good recipes or website with recipes?

All-Star Chili





2 slices bacon


1 medium onion, chopped


1 medium green or red bell pepper, chopped


1 package (1 ounce) Williams Cajun Chili Seasoning


2 cans (141/2 ounces each) chicken broth


2 cans (16 ounces each) baked beans, undrained


1 can (14 ounces) stewed tomatoes


2 tablespoons Worcestershire sauce


2 tablespoons molasses


1 1/2 cups cooked rice


1/2 cup sliced almonds, lightly toasted


2 tablespoons diced green onions





Directions:





Cook bacon in Dutch oven over medium-high heat until bacon is crisp.





Remove bacon to paper towels; crumble and reserve. Discard all but 1 tablespoon bacon drippings. Add onion and green pepper to drippings in pan.





Cook, stirring frequently, until vegetables are tender, about five minutes. Add chili seasoning, chicken broth, beans, tomatoes, Worcestershire sauce and molasses, blending well. Reduce heat; simmer 20 minutes, stirring occasionally.





Toss together rice, almonds and green onions. Pack about 1/4 of this mixture into a 1/2-cup measuring cup which has been sprayed with nonstick spray vegetable coating.





Ladle chili into four serving bowls, dividing equally. Unmold rice mixture in the center of each bowl of chili. Sprinkle with reserved crumbled bacon and serve hot.





Serving Size: Makes 4 servings

oh you can make anything in a dutch oven! I absolutely love them. Just yesterday I made green chicken chili in mine.





It's a really easy recipe that you can change up as you like. I just brown some chicken in the bottom of the dutch oven with a little olive oil. Then add a chopped onion and some slice garlic. When those are nice and caramelized, add 2 small cans of fire-roasted green chilies, 2 cans of beans, 3 cans of green enchilada sauce and enough water or chicken broth to take up the rest of the space in the dutch oven. Season with salt, pepper, some garlic powder, a palmful of ground cumin and about half a palmful of chili powder. Just bring to a boil and reduce to a simmer until it thickens up a bit.





Last week I made French onion soup. Just brown a mess of onions (about 1/2 to 3/4 of the volume of the duct oven, I go with 3/4 because I looooove onions!) Add some garlic and a little garlic powder, salt, pepper, a little celery seed or celery salt and some wor. sauce. Add enough beef broth to make up the rest of the volume then bring to a boil and simmer down til it's thicken. Serve with toast with Gruyere or Swiss on top.
EASY OVEN BEEF STEW





2 lbs stew beef cut in small chunks


4 potatoes diced


3 carrots peeled and sliced


2 stalks celery diced


1 small onion diced


1 can of cream of celery


1 can of cream of mushroom


1/2 soup can of water


pepper [no salt, soup will make it salty enough]


1 tbsp parsley


1 tbsp gravy master or browning bouquet





Place all ingredients in pot, stir to coat everything with soup, bake COVERED with tight fitting lid or foil for 1 1/2 to 2 hrs @ 350 degrees, stirring occasionally.

First off, you might need to season the inside of the pan before using it. I'm not sure with the enameled ones, but my plain cast iron skillets and dutch oven had to be seasoned when I first got them (over 30 years ago!).





I like to do a beef pot roast in my dutch oven (or a pork roast with sauerkraut and carrots). For the beef roast, brown the roast over medium high heat on all sides. Season with salt, pepper, paprika, parsley and a bay leaf. Add garlic (crushed/chopped/or powder) if desired. Add sliced carrots, onions and green pepper around the roast. Add enough water to be about 1'; high in the pan. Cover. Put dutch oven in oven at 325 F to 350 F and cook until done. You can add quartered potatoes with the roast if desired or make mashed potatoes. Use the natural gravy on everything when serving.

Sugar Cookies





INGREDIENTS


1 cup unsalted butter, room temperature


1 cup vegetable oil


1 cup granulated sugar


1 cup confectioners' sugar


2 eggs


1 teaspoon vanilla


4 1/2 cups all-purpose flour


1 teaspoon baking soda


1 teaspoon cream of tartar





DIRECTIONS


Combine butter or margarine, oil and sugars in large mixing bowl; mix well. Add eggs; beat 1 minute until well blended. Add vanilla; beat well. In separate bowl, combine flour, baking soda and cream of tartar; add to creamed mixture, mixing well. Drop by small teaspoonfuls on ungreased baking sheet. Bake at 375 degrees F for 8-10 minutes.














Buckeye Balls





INGREDIENTS


4 (16 ounce) jars peanut butter


3 1/2 (16 ounce) packages confectioners' sugar


1 cup butter, melted


3 (12 ounce) packages semi-sweet chocolate chips


2 tablespoons shortening





DIRECTIONS


Blend together the peanut butter, sugar and melted butter. Allow to chill in refrigerator.


Roll into 1 inch round balls and return to refrigerator.


In a double boiler over medium heat, melt the chocolate and shortening. Whisk together until smooth.


With a toothpick inserted in the balls, dip them into the chocolate so they look like buckeyes. Place on waxed paper and allow to set in refrigerator.














Chewy Chocolate Chip Cookies





INGREDIENTS


1 cup butter, softened


3/4 cup packed brown sugar


1/4 cup white sugar


1 (3.5 ounce) package instant vanilla pudding mix


2 eggs


1 teaspoon vanilla extract


2 1/4 cups all-purpose flour


1 teaspoon baking soda


2 cups semisweet chocolate chips





DIRECTIONS


Preheat oven to 375 degrees F (190 degrees C).


In a mixing bowl, cream butter and sugars. Add pudding mix, eggs and vanilla. Combine flour and baking soda; add to creamed mixture and mix well. Fold in chocolate chips.


Drop by teaspoonfuls onto ungreased baking sheets. Bake for 10 to 12 minutes or until lightly browned.

















Chocolate Crackled Cookies





INGREDIENTS


1 (18.25 ounce) package devil's food cake mix


1/2 cup butter flavored shortening


1 tablespoon water


2 eggs


1 cup confectioners' sugar





DIRECTIONS


Preheat oven to 375 degrees F (190 degrees C). Grease cookie sheets.


In a medium bowl, beat together the shortening, water, and eggs. Add the cake mix, and mix until smooth.


Roll the dough into walnut sized balls, and roll the balls in the confectioners' sugar. Place cookies 2 inches apart on the prepared cookie sheets. Bake for 10 minutes in the preheated oven. These are best served the same day, as the confectioners' sugar becomes absorbed by the cookie giving it a pasty look. This can be fixed by dusting the cookies with sugar again.














Oatmeal Raisin Cookies





INGREDIENTS


1 cup butter


1 1/4 cups packed brown sugar


2 eggs


2 teaspoons vanilla extract


1 tablespoon honey


1 1/2 cups all-purpose flour


1 teaspoon baking soda


1 teaspoon ground cinnamon


3 cups rolled oats


1 cup raisins





DIRECTIONS


Preheat oven to 350 degrees F (175 degrees C).


In a medium bowl, cream together the butter and brown sugar until smooth. Stir in the eggs, vanilla and honey. Sift together the flour, baking soda and cinnamon, gradually stir into the creamed mixture. Finally, stir in the rolled oats and raisins.


Drop dough by rounded teaspoonfuls onto unprepared cookie sheets. Bake for 10 to 15 minutes in the preheated oven, until cookies start to brown. Remove from baking sheets to cool on wire racks.Any easy cookie recipes that are easy to bake?

Best Chocolate Chip Cookies in the World





1 cup shortening


1/2 cup granulated sugar


1 cup packed brown sugar


2 eggs

My Big, Fat Chocolate Chip Cookies





2 1/2 cups all-purpose flour


1 teaspoon baking soda


1 teaspoon salt


1 cup (2 sticks) unsalted butter, at room temperature


1/2 cup white sugar


3/4 cup packed light brown sugar


1 teaspoon pure vanilla extract


2 large eggs


1 (8-ounce) block dark chocolate, coarsely chopped


Preheat the oven to 350 degrees F.


Line 2 cookie sheets with parchment paper. Sift together the flour, baking soda, and salt into a medium bowl and set aside.


Place the butter, sugar, and brown sugar in the bowl of an electric mixer; cream together on medium speed until light and fluffy. Scrape down the sides of the bowl with a rubber spatula. Beat in the vanilla and eggs. Gradually add the dry ingredients to the creamed mixture and continue to mix until a smooth batter forms. Turn off the mixer and fold in the chocolate chunks using the spatula.


To form the cookies, scoop about 1/4 cup of cookie dough into your hands and roll it around into a ball; place them about 3-inches apart onto the prepared cookie sheets; you should get about 4 cookies on each pan. Press down the tops of the dough slightly and bake until the cookies are light brown, 12 minutes for chewy cookies, or about 15 minutes for crispy cookies.


Allow the cookies to cool on the baking sheets for 5 minutes before transferring to a wire rack to cool completely. Repeat with remaining dough/cookie sheets.
Chocolate Mint Cookies

3/4 cup butter

36 chocolate mint wafer candies











Method


1) In a large pan over low heat, cook butter, sugar and water until butter is melted. Add chocolate chips and stir until partially melted. Remove from heat and continue to stir until chocolate is completely melted. Pour into a large bowl and let stand 10 minutes to cool off slightly.





2) At high speed, beat in eggs, one at a time into chocolate mixture. Reduce speed to low and add dry ingredients, beating until blended. Chill dough about 1 hour.





3) Preheat oven to 350 degrees F (175 degrees C).


Roll dough into balls and place on ungreased cookie sheet about 2 inches apart. Bake 8-10 minutes. While cookies are baking unwrap mints and divide each in half.





4) When cookies are brought out of the oven, put 1/2 mint on top of each cookie. Let the mint sit for up to 5 minutes until melted, then spread the mint on top of the cookie. Eat and enjoy!

2) Sift together the flour, salt and baking soda; set aside.





3) Cream together the butter, sugar, peanut butter and brown sugar until fluffy. Beat in the egg, vanilla and milk. Add the flour mixture; mix well.





4) Shape into 40 balls and place each into an ungreased mini muffin pan.





5) Bake at 375 degrees for about 8 minutes. Remove from oven and immediately press a mini peanut butter cup into each ball. Cool and carefully remove from pan.
CAKE MIX COOKIES


(I make these at Christmastime for gift giving)





White Cake Mix


2 Tablespoons water


2 eggs


1/2 cup cooking oil


1 teaspoon almond extract


1/2 cup chopped nuts


powdered sugar





Mix all ingredients, except powdered sugar.





Drop batter (about a teaspoon per cookie) into a bowl of powdered sugar.





Roll in sugar until it is an approximate shape of a ball.





Place ion a lightly greased cookie sheet.





Bake at 350 degrees about 18 minutes, until lightly browned.





Cool on wire racks. Makes about 4 dozen cookies.





(Use any flavoring or cake mix you desire.)








Monster Cookies


(Makes a ‘monster amount)


I found this recipe…but as yet have not tried it.





Cream together: *(use a ‘large’ pan for this)


12 eggs


1 lb soft butter


2 lb brown sugar


4 c. sugar


1 T vanilla


½ tsp salt


3 lb creamy peanut butter


Then add:


18 c. rolled oats


8 tsp baking soda


1 lb M%26amp;M’s plain


1 lb chocolate chips (or butterscotch)


Spoon out and Bake at 325 til done!








Ritzy/Chocolate/Peanut Butter Sandwich Cookies





Ritz crackers


Creamy peanut butter


Chocolate chips





1.) Cover cookie sheet with waxed paper.


2.) Melt the chocolate chips in the double boiler.


3.) Spread peanut butter on a Ritz and top with another cracker.


4.) Dip the sandwich in the melted chocolate use tongs carefully so you don't break the cracker and dip in chocolate…cover completely.


5.) Place the chocolate-covered sandwich on the cookie sheet…and let chocolate set.


Store in air tight container in refrigerator.





I’ve used…graham crackers (break at perforations)….various crackers.





Hint: Might try vanilla wafers…..and maybe fill with some store bought frostings….. or small amount of jam…..or marshmallow crème.





No-Bake Peanut Butter Squares





Ingredients::


1/2cup (1 stick) butter or margarine


2 cups (sifted) powdered sugar


1 1/2 cups graham cracker crumbs


1 cup peanut butter


1 1/2 pkg. (12 squares) Semi-Sweet Baking Chocolate


1/2cup milk (optional)





Directions:


Line 13” x 9” baking pan with foil, with ends of foil extending over sides of pan. Set aside.


Melt butter in large microwavable bowl on HIGH 1.5 - 2½ minutes or until melted.


ADD sugar, graham cracker crumbs %26amp; peanut butter……and milk if needed. Mix well spread into prepared pan.


Microwave chocolate 1.5 – 2 minutes or until melted stirring after each minute. Cool slightly; pour %26amp; spread over peanut butter mixture in pan. Cool. Cut partially through dessert to mark 48 squares. Refrigerate 1 hour or until set.


LIFT from pan, using foil handles. Cut all the way through dessert into squares.





(I used the milk…was easier to spread in pan….I’ve made this also…not bothering to line pan with foil…or not scoring before refrigerating…….served from pan…..let it sit at room temperature before cutting…about 15 – 20 minutes..…easier to cut into serving pieces).

Mock Ice Cream Sandwiches





2 whole graham crackers


Cool Whip





Spread a thin layer of Cool Whip on 1 whole cracker….top with remaining cracker….freeze.


Can't get any simpler that that!!


You'll want to make several at a time.....can't eat just one!





HINT: Melt some chocolate and drizzle over top before freezing.

Bake for 15 minutes (for crunchy) or 11 min for soft or until done. Makes about 4 dozens. Yummy!

What I usually do with my catfish is just fry it in olive oil and eat it with butter. (I'm wary of the broiler.) Are there any other (relatively easy) catfish recipes you like? I like it fried, but I do it in the oven; it's less greasy. Dip catfish chunks into plain flour and pile up on a plate. Prepare a pan of flour with either lawry's or old bay seasoning and pepper. Mix an egg with milk, dip the floured pieces into the milk and then into the seasoned flour. Fill a frying pan with only enough oil to coat it well, drop the fish pieces in, and as they brown on both sides, transfer to a pyrex pan. This leaves most of the oil in the pan. Bake all the way through. I serve it with tartar sauce -- either a grated cucumber (those little fresh ones are really good) or sweet relish mixed with mayo. I luv catfish!!

Take a boneless fillet lay on a piece of aluminum foil a little garlic salt a sprig of fresh dill and a whole slice of lemon %26amp; a large ice cube. like frm an ice cube tray use bagged cubes 2 just takes a few. fold in2 a sealed pouch. The ice keeps the fish frm drying out while grilling. Depending on the thickness cooking time varies 3-5 min per side. Nice little salad or some grilled veggies %26amp; rice, gr8 meal especially in the summer
catfish with cheese grits.

you can pan fry the catfish in olive oil, throw in a can of dice tomatoes, add fresh basil, and sweet black olives. serve with brown rice, yellow rice, or orzo.

i double dredge mine with seasoned flower and fry till golden brown.


i pair it with fries or rice usually. if i was doing veggies i would go with corn or peas. or peas n carrotts.





i have also baked it with lemon and dill or lemon and pepper.





it's the kind of fish you don't have to over flavor so i keep it light when making it.
Lay the whole fish on foil sprayed with PAM and cook on the grill witha little butter for taste .... Awesome.. My Lovely wife loves this way .... Very rewarding...

    I am having a big party for my son's first birthday, and I don't want to spend the whole party in the kitchen. Can anyone suggest some interesting recipes that I can make the night before and just heat or prep the day of the party?     if you make deviled eggs you can make the filling ahead of time and put it in a a big ziploc bag in the fridge. When you are ready to use the filling, cut off a corner of the bag not too big or small and use it to pipe the filling into the egg halves.Can anyone give me some easy make ahead appetizer recipes?
    In addition to the veggie tray, a fruit tray with fruit dip is always good. Alsol a couple of easy hot recipes are BBQ Smokies and Swedish Meatballs. Another easy one is the mini quiches.





    As for the mini quiches, get then frozen and heat through they only take about 30 minutes.








    BBQ Smokies


    In a crock pot put one bottle of your BBQ sauce, 12 oz of beer and 2 pkgs of Oscar Meyer Little Smokies.


    Cook until heated through (about 3 hours) on low. Start on high and turn to low when sauce gets hot.





    Swedish Meatballs


    In a crock pot or electric skillet make a gravy with Cream of Mushroom soup, add frozen meatballs and heat through.





    Serve with slices of French baguettes (skinny French Bread)





    Fruit Dip








    Dried Cheese Ball


    Ingredients:





    16 oz cream cheese


    3 - 4 chopped green onions, tops too


    1 small can chopped black olives, drained


    1 jar dried beef, chopped


    1/2 tsp Accent or seasoning salt


    1 tsp Worcestershire sauce





    Instructions:





    Combine all ingredients in a bowl and then put in your serving dish and chill at least 4 hours.





    Serve with crackers or can stuff celery with it too.

    CHICKEN FAJITA DIP





    MIX TOGETHER THOROUGHLY:





    1 (10 3/4oz.) can Cream of Chicken Soup


    1/2 cup sour cream


    3/4 cup salsa


    2 cups colby/jack shredded cheese


    Hint:


    Can be served cold or warm.


    Can be doubled, tripled....etc.








    MARINATED VEGGIE SALAD


    1 lb. can French style green beans


    1 lb. can small peas


    1 lb. can white corn


    1 - 4oz. jar pimento (chopped)


    1 cup shopped onion


    1 cup chopped celery


    1 cup chopped green pepper


    1 cup sugar (I used artificial sweetener)


    2/3 cup vinegar (I used red wine vinegar)


    1/2 cup cooking oil


    1 tsp. salt


    1 tsp. pepper





    1.)Pour green beans, peas, corn %26amp; pimento in a colander to drain over a


    large bowl. Discard 1 1/2 cups of liquid.


    2.)Put veggies in a large bowl and fold in onions, celery and green


    peppers.


    3.)Mix together thoroughly the remaining ingredients and toss with


    veggies.


    4.)Cover and let sit over night in refrigerator. (The longer it marinates the better.)
    chili dip:


    1 8oz cream cheese


    1 can favorite chili


    1/2 c shredded cheddar cheese





    soften the cream cheese, top with the chili and the cheddar, heat in microwave a minute or so, and dip stuff in it (tortilla chips in particular)





    this is very good!
    Salami rollups. You take hard salami, Not cotto salami, and put a scoop of cream cheese in the middle and then roll it up and stick it with a toothpick. It is so simple but just yummy. I never have any left when I take them for a pot luck.

    2 Golden Delicious apples - peeled, cored and diced


    8 ounces raspberries


    1 pound strawberries


    2 tablespoons white sugar


    1 tablespoon brown sugar


    3 tablespoons fruit preserves, any flavor





    10 (10 inch) flour tortillas


    butter flavored cooking spray


    2 cups cinnamon sugar








    DIRECTIONS


    In a large bowl, thoroughly mix kiwis, Golden Delicious apples, raspberries, strawberries, white sugar, brown sugar and fruit preserves. Cover and chill in the refrigerator at least 15 minutes.


    Preheat oven to 350 degrees F (175 degrees C).


    Coat one side of each flour tortilla with butter flavored cooking spray. Cut into wedges and arrange in a single layer on a large baking sheet. Sprinkle wedges with desired amount of cinnamon sugar. Spray again with cooking spray.


    Bake in the preheated oven 8 to 10 minutes. Repeat with any remaining tortilla wedges. Allow to cool approximately 15 minutes. Serve with chilled fruit mixture.

    Cheese Ball:





    INGREDIENTS


    3 (8 ounce) packages cream cheese, softened


    1/2 teaspoon minced garlic


    1 tablespoon Worcestershire sauce


    1 tablespoon hot pepper sauce


    1 pound shredded Cheddar cheese


    1 cup pecans, coarsely chopped


    1/4 cup chopped fresh parsley








    DIRECTIONS


    In an electric food processor or blender, combine cream cheese, garlic, Worcestershire sauce and hot pepper sauce. Blend well. Add Cheddar cheese and process until the Cheddar is fine, but still very visible. Shape the mixture into balls or logs. Wrap individually in plastic wrap and place in the freezer.


    While the balls are in the freezer, combine the ground pecans and parsley in a shallow bowl. Remove the balls from the freezer and roll them in the pecan and parsley mixture.

    Stuffed Mushrooms;





    INGREDIENTS


    3 tablespoons butter, melted


    24 fresh mushrooms


    2 tablespoons butter


    2 tablespoons minced green onions


    1 teaspoon lemon juice


    1 cup diced cooked crabmeat


    1/2 cup soft bread crumbs


    1 egg, beaten


    1/2 teaspoon dried dill weed


    3/4 cup shredded Monterey Jack cheese, divided


    1/4 cup dry white wine








    DIRECTIONS


    Preheat oven to 400 degrees F (200 degrees C). Prepare a 9x13 inch baking dish with 3 tablespoons butter.


    Remove stems from mushrooms. Set aside caps. Finely chop stems.


    Melt 2 tablespoons butter in a medium saucepan over medium heat. Stir in the chopped stems and green onions and cook until soft, about 3 minutes. Remove saucepan from heat. Stir in lemon juice, crabmeat, soft bread crumbs, egg, dill weed and 1/4 cup Monterey Jack cheese. Thoroughly blend the mixture.


    Place mushroom caps in the buttered pan, and stir until caps are coated with the butter. Arrange caps cavity side up, and stuff cavities generously with the green onion and crabmeat mixture. Top with remaining Monterey Jack cheese. Pour wine into the pan around the mushrooms.


    Bake uncovered in the preheated oven 15 to 20 minutes, until cheese is melted and lightly browned. Serve warm.

    My neighbor is scheduled to give birth next week and I want to make her a dinner or something for her family so they can enjoy the new baby and not have to worry about cooking.





    What are some good recipes for easy meals, that most people will like, and that freeze well? I don't know these people that well as I've just moved here, so I don't know if they have any dietary restrictions.

    You need to take something that is going to really help her having her energy back! Dessert is good but the important stuff is the actual meal. Do something simple. After having a baby is not the best time to try different foods. I would take stir fry (very simple - does not freeze well but I don't think she would like to freeze food now), or meat balls with some rice, etc, some sort of chicken...Any good recipes for neighbor about to have a baby?
    Stir Fry is always a good one because it's easy to make and quick to cook. It's got veggies as well as meat (she'll need to be making sure she has plenty of iron so a beef stirfry would be best) and all she'll have to do is chuck it in a pan and heat it up!

    I got 2 frozen lasagnas and it was so awesome . . . I know it is hard to make but ours where store bought and so yummy!

    If you're looking for a dessert, try looking up s'more brownies. They're just brownies on top of graham cracker crumbs, covered by marshmallows. Put it back in the oven to give the marshmallows a golden crisp. They're amazing and really easy to make too!
    A big tray of lasagna and a loaf of Italian bread would be a nice dinner. Also, you could take them a fruit basket (one that you put together). You can include: bananas, grapes, strawberries, and more.

    CREAMY PASTA PRIMAVERA





    12 ounces pasta, bowtie noodles


    2 yellow squash, thinly sliced


    10 ounces asparagus spears, cut in 2'; pieces


    8 ounces baby carrots, cut lengthwise, half


    2 tablespoons all-purpose flour


    2 cups milk


    1/4 cup sour cream


    2 tablespoons Dijon mustard


    2 tablespoons fresh lemon juice


    1/2 teaspoon salt


    1/2 teaspoon pepper


    2 ounces feta cheese, crumbled





    Add pasta to a large pot of boiling water and cook 10 minutes. Add squash, asparagus and carrots and cook 8 minutes or until pasta and vegetables are tender. Drain and place in a large serving bowl.


    Meanwhile put flour in a large skillet. Slowly whisk in milk until blended, taking care to get into corners of skillet. Bring to a boil over medium-high heat, stirring often. Reduce heat to low and simmer 3 to 4 minutes, stirring constantly, until sauce thickens slightly. Remove from heat, whisk in sour cream, mustard, lemon juice, salt and pepper.


    Pour over pasta mixture and stir to mix and coat. Sprinkle with cheese.

    one of my favorite pasta dishes is Macaroni Beef...





    in a large skillet I will brown about a pound of hamburger and salt and pepper the hamburger. I will drain the grease from it and then add a large can of tomatoes and then add uncooked elbow macaroni or egg noodles and bring everything to a boil and then reduce heat and simmer for about 20 minutes or until the noodles are tender.





    It is also good with hot sausage instead of the beef....





    here is one for pizza casserole:





    1 lb ground beef


    1/3 c. onion


    1/2 c. green pepper, chopped


    1 can sliced mushrooms, drained


    1 can black olives, drained


    1 pkg pepperoni


    1 jar spaghetti sauce


    1 pkg egg noodles


    salt and pepper to taste


    2 c. shredded pizza cheese





    Preheat oven to 350 degrees. In a large skillet, cook beef until slightly browned. Add in onions, green peppers, salt and pepper until beef is completely browned, onions and peppers are tender. Drain. Add in mushrooms, black olives. and pepperoni until all is heated thoroughly. In a large pot, cook noodles according to the directions on the package. When noodles are done, drain water from noodes. Put cooked noodles into large mixing bowl. Add beef mixture and jar of spaghetti sauce, until blended. Add mixture to a 13 x 9 dish. Top with shredded cheese. Bake for 15 minutes or until cheese is completely melted.
    Do you like shrimp? This is very easy to make. You can leave out thte parsley, I do.





    CREAMY CAJUN SHRIMP LINGUINE





    6 ounces linguine


    1/2 pound raw shrimp, peeled and deveined


    1 tablespoon butter


    1 (8 ounce) package sliced mushrooms


    1 large red bell pepper, cut into thin slices


    2 teaspoons all-purpose flour


    1/2 teaspoon Cajun seasoning


    1/4 teaspoon cayenne pepper


    2/3 cup half-and-half


    1/4 cup chopped fresh flat-leaf parsley





    Cook pasta according to package directions. Meanwhile, melt butter in a large skillet over medium-high heat. Add mushrooms and bell pepper to pan; sauté until tender. Add flour, Cajun seasoning and cayenne to pan; sauté 30 seconds. Stir in half-and-half; cook for one minute, stirring constantly. Add shrimp and cook until shrimp are done. Remove from heat and mix in pasta and parsley.





    Yield: 2 servings

    frankie pasta bake





    1 tbsp olive oil


    1 onion , chopped


    1 garlic clove , crushed


    400g can cherry or chopped tomatoes


    pinch sugar


    few dashes Worcestershire sauce


    100g rigatoni or other tube-shaped pasta


    50g cheddar, grated


    hunk of baguette or sliced bread, coarsely grated


    2 frankfurters , sliced





    Heat the oil in a medium pan and fry the onion for 5 mins until softened and lightly golden. Stir in the garlic and cook for a further min. Mix in the tomatoes and sugar, bring to the boil and simmer for 20 mins. Add a few dashes of Worcestershire sauce and season to taste. This basic sauce can now be chilled or frozen, see recipe intro.


    Meanwhile, cook the pasta according to pack instructions. Heat the grill to high. Mix together the cheese and breadcrumbs.


    Drain the pasta and stir into the sauce. Tip in the frankfurters and spoon into a heatproof dish. Scatter over the cheesy crumbs and grill for 3-5 mins or until bubbling hot and golden. Serve with a simple salad.

    4 chicken fillets, skinless and cut into chunks


    1 red, yellow or green pepper, seeded and cubed


    1 courgette, cut into chunks


    1 red onion, quartered


    2 firm tomatoes, halved


    Salt and black pepper


    1tbsp oil


    175g (6oz) dry pasta





    1. Put the vegetables on a roasting pan and drizzle with most of the oil. Season with salt and pepper and place under a hot grill for 5 - 10 mins, turning occasionally, until softened and slightly charred.


    2. Wipe a large frying pan with the remaining oil, heat the pan and add the chicken pieces.


    3. Cook over a high heat for about 4 - 5 mins, turning the chicken frequently until it is golden brown all over.


    4. Meanwhile, cook the pasta as per pack instruction in a large pan of boiling water. Drain and return to the pan.


    5. Add the charred vegetables and chicken to the pasta and toss. Serve with a herb garnish.
    Summer Spaghetti Salad





    • 16 oz. thin spaghetti, broken


    • 3 medium tomatoes, diced


    • 3 small zucchini, diced


    • 1 cucumber, seeded and diced


    • 1 each red and green pepper, diced


    • 8 oz. Italian salad dressing


    • 2 tablespoons Parmesan cheese


    • 1 1/2 teaspoons sesame seeds


    • 1 1/2 teaspoons poppy seeds


    • 1/2 teaspoon paprika


    • 1/4 teaspoons celery seed


    • 1/8 teaspoon garlic powder





    • Cook spaghetti according to package directions; drain and rinse in cold water. Place in a large bowl; add tomatoes, zucchini, cucumber and peppers. In a separate bowl combine remaining ingredients; pour over salad and toss to coat. Cover and refrigerate for at least 2 hours.
    An easy pasta salad could be as easy as boiling off some pasta shells or macaroni, drain them and then add mayonnaise (enough to cover evenly). Then add thawed frozen peas, some grated carrots, bacon bits and 2-3 tablespoons of diced pickles or pickle relish. If desired add a pinch or two of dill and chopped chicken.     The easiest pasta recipe I have is really simple and looks gourmet. Cook your pasta. In another pan fry some onion and chopped tomatoes.

    Kosher salt


    2 C. heavy cream


    1 C. crushed tomatoes in thick tomato puree


    1/2 c freshly grated Pecorino Romano (1 1/2 oz.)


    1/2 c. shredded imported Italian fontina (1 1/2 oz.)


    1/4 c. crumbled Italian Gorgonzola (1 1/2 oz.)


    2 tablespoons ricotta cheese


    1/4 pound fresh mozzarella, sliced


    6 fresh basil leaves, chopped


    1 pound imported penne rigate pasta


    4 tablespoons (1/2 stick) unsalted butter





    Preheat oven to 500 degrees F.


    Bring 5 quarts of salted water to a boil in a stockpot.


    Combine all the ingredients except the penne and butter in a large mixing bowl. Mix well.


    Drop the penne into the boiling water and parboil for 4 minutes. Drain well in a colander and add to the ingredients in the mixing bowl, tossing to combine. Divide the pasta mixture among 6 shallow ceramic gratin dishes (1 1/2 to 2 c. capacity) Dot with the butter and bake until bubbly brown on top, 7 to 10 minutes.

    1/4 C. flour


    1/4 C. butter


    1 qt. milk


    1/8 tsp. pepper


    1/2 tsp. salt


    24 slices extra thick bacon, fried until crisp, then cut into ¼” slices


    1/4 C. olive oil


    3 C. mushrooms, sliced


    6 Tbsp. scallions, finely minced


    1 lb. spaghetti, uncooked


    2 tsp. fresh parsley, finely chopped


    1/2 C. Parmesan cheese, freshly grated





    Melt butter in 4-quart heavy saucepan over medium heat. Stir in flour and cook for 1 minute. Add milk, salt and pepper and stir vigorously with wire whip until mixture barely comes to a boil. Reduce heat and simmer 5 minutes, whipping frequently while sauce thickens. Keep warm.





    Add bacon into sauce. Heat olive oil in large skillet over medium heat. Add sliced mushrooms and minced onions and sauté until golden. Add to sauce. Cook spaghetti according to package directions. Drain well and add to the sauce along with the parsley. Blend well and transfer to serving dish. Sprinkle with Parmesan cheese and serve immediately.

    1 lb. elbow macaroni, boiled according to packaged directions, drained, rinsed w/ cold water


    Small can of sliced black olives, drained


    Small jar of diced pimientos, drained


    ¼ cup chopped parsley


    ¼ cup chopped purple onion


    3 green onions, chopped (white %26amp; green)


    ½ cup large-shred cheddar cheese


    10 oz. box of green peas, frozen


    1 tsp. kosher salt


    ½ tsp black pepper


    1 cup mayonnaise


    1 cup prepared Ranch dressing





    Refrigerate cooked pasta until cold. Add next 7 ingredients and toss. Combine salt, pepper, mayonnaise, and Ranch dressing; pour over salad and toss well. Taste and adjust for seasonings.





    Other ingredients which may be included are shredded carrots, quartered artichoke hearts, sliced hearts of palm, diced cucumber, diced fresh tomato, chopped sundried tomatoes, sliced boiled eggs, crumbled crisp bacon, diced red or green bell peppers, feta cheese, or minced salami.

    1 head of garlic, roasted (or 3 Tbsp jarred roasted minced garlic)


    1 teaspoon olive oil


    1 pound Cavatappi pasta


    ½ pound sliced Applewood smoked bacon


    1 ½ cups fresh white bread crumbs (5 slices, crusts removed)


    ½ cup grated Parmigiano Reggiano cheese


    8 tablespoons butter


    ¼ cup minced shallots


    ½ cup flour


    1 quart whole milk


    6 ounces Gruyere cheese, grated


    8 ounces extra-sharp Cheddar cheese, grated


    ½ teaspoon pepper


    1 teaspoon salt


    ¼ teaspoon freshly grated nutmeg





    1. Preheat oven to 350°.





    2. To roast garlic: Slice ½ inch off the top of the entire head of garlic. Drizzle with olive oil and sprinkle with salt and pepper. Wrap garlic head tightly in a square of heavy foil and roast until tender — about 45 minutes. Remove garlic pulp by squeezing garlic head. Smash cloves with a fork to form a paste.





    3. Cook pasta according to package directions.





    4. Cook bacon completely. Drain on paper towels. Reserve 1 tablespoon of bacon fat. Crumble bacon when cool.





    5. To make topping: Combine breadcrumbs, crumbled bacon, Parmigiano Reggiano cheese, and 2 tablespoons of melted butter. Set aside.





    6. Preheat oven to 375°.





    7. Sauté shallots over low heat in reserved bacon fat for one minute. Add remaining 6 tablespoons of butter and continue to sauté shallots in butter and bacon fat until translucent.





    8. Add flour and continue to cook for 1-2 minutes. Increase heat to medium. Stirring constantly with a whisk, add milk and roasted garlic paste.





    9. Cook until sauce is thickened (coats the back of a spoon). Remove sauce from heat then add salt, pepper, nutmeg, Gruyere and Cheddar cheeses. Taste and adjust salt and pepper if necessary.





    10. Stir in cooked pasta. Pour into baking dish. Sprinkle topping to cover entire top. Cover with foil and bake 15 minutes. Remove foil and continue baking until sauce is bubbly and topping is browned. Enjoy!

    PREPARATION:


    Combine the apple butter, melted butter, lemon juice, and vanilla. Add bread cubes and chopped nuts. Toss to combine ingredients. Transfer mixture to an 11x7-inch baking pan. Bake in a 350掳 oven for 20 to 25 minutes.

    Unwrap each individual caramel and drop into a pan. Add water, and place on low heat until Kraft caramels have fully melted. Don't forget to stir occasionally. In the meantime, wash apples, twist out the stems and press each popsicle stick into the core of each apple. Roll apple in the melted caramel until completely covered. Place on wax paper.

    INGREDIENTS


    2 pounds potatoes - peeled and cubed


    1 pound bacon


    1 onion, chopped


    4 tablespoons all-purpose flour


    8 cups milk


    1/2 teaspoon salt


    1/2 teaspoon ground black pepper


    3 (14.75 ounce) cans creamed corn


    1/4 cup shredded Cheddar cheese


    1 dash paprika





    DIRECTIONS


    Boil potatoes in salted water until soft. Drain. Mash half of the potatoes and set aside.


    Fry the bacon until very crisp. Crumple the bacon and set aside.


    Fry the onion inn the bacon grease until translucent and soft.


    Dump the cooked onions into a large stockpot. Add the flour and heat until the mixture is bubbly and the flour is well dissolved. Add the milk and bring to a boil over medium-low heat, stirring frequently. You need to watch your pot pretty carefully while bringing to a boil and heating. The bottom tends to easily scorch. Once boiling add the salt, pepper, bacon, corn and all the potatoes. (If desired reserve some of the bacon for the garnish.)


    Heat soup until hot. Serve garnished with a dash of paprika, a sprinkling of cheddar cheese and some crumbled bacon.Any good recipes for corn chowder?

    Cantonese Creamed Corn soups





    Traditionally, this warming Cantonese soup is prepared in the same way as “Chicken Velvet” by chopping the meat or seafood into small pieces and mixing it with egg whites, liquid and cornstarch.


    This recipe for Cream Corn Soup is much simpler – the cornstarch and water mixture is used as a thickener, and the egg whites are streamed into the hot broth before serving, just like in Egg Drop Soup. White pepper, green onions and Asian sesame oil add extra flavor to the broth. Serves 6.


    Cook Time: 15 minutes


    Ingredients:


    5 cups homemade chicken stock or store bought chicken broth


    1 1/4 cups canned creamed corn


    1/4 teaspoon salt, to taste


    1/2 teaspoon granulated sugar


    Black or white pepper, to taste


    2 teaspoons Chinese rice wine or dry sherry


    3/4 cup cooked crab meat, or cooked diced ham


    1 tablespoon cornstarch dissolved in 2 tablespoons water


    2 egg whites, lightly beaten


    1/2 teaspoon Asian sesame oil, or to taste


    2 green onions (spring onions), finely chopped for garnish, optional


    Preparation:


    1.Bring the broth or stock to a boil in a saucepan over medium heat. Stir in the creamed corn and bring back to a boil (about 3 minutes). 2. Stir in the salt, sugar, white pepper, rice wine or sherry and cooked crabmeat. Cook for about 2 minutes to bring back to a boil again. 3. Give the cornstarch and water mixture a quick re-stir, and then pour into the boiling soup, stirring to thicken. When the soup has thickened, remove the saucepan from the heat. 4.     3. Remove the soup from the heat, and add green onions. If desired, stir in 2 lightly beaten eggs or 2 egg whites.

    It sounds a little weird to make soup out of salad ingredients, but this beautiful cold soup is light and refreshing.

    * 4 c Boston or Bibb lettuce, torn


    * 2 c baby spinach, stemmed


    * 1 c fresh parsley


    * 1/3 c shallot, onion, and/or garlic, chopped

    * pepper


    * optional garnish: very thin slices of radish, carrot, and/or cucumber





    Directions Place everything except garnish in the blender and process until smooth.

    * 2-3 large gem lettuce

    Break off the outside leaves of the lettuces.


    Lay them on a plate and season with salt.


    Leave for about 15 minutes to 'bleed' and soften.


    Heat a large frying pan or wok until very hot.


    Toss the leaves with the olive oil and stir-fry for just a minute until they begin to wilt.


    Mix in the rice wine vinegar and drain on paper towel.


    Tastes better than spinach!

    1 tbsp. baking powder


    1/2 tsp. salt


    12 tbsp. (1 1/2 sticks) unsalted butter, at room temperature

    1 cup milk


    5 egg whites, at room temperature








    Instructions:


    Position a rack in the middle of an oven and preheat to 350潞F (180潞C). Butter and flour two (2) round 9 x 1 1/2 inch deep cake pans.





    In a medium bowl, sift together the flour, baking powder and salt. In a large bowl, using an electric mixer set on medium-high speed, beat the butter until light. Gradually add the sugar, beating until well blended. Beat in the vanilla extract. Reduce the speed to low and, dividing the flour mixture into 3 batches, beat the flour mixture into the butter mixture alternately with the milk just until combined.





    In a large bowl, using an electric mixer fitted with clean, dry beaters and set on high speed, beat the egg whites until stiff peaks form. Using a rubber spatula, gently fold the beaten whites into the batter just until incorporated. Divide the batter between the prepared pans; smooth with the spatula.





    Bake until a toothpick inserted into the centers comes out clean, about 30 minutes. Transfer to racks and let cool in the pans for 10 minutes. Run a sharp knife around the pan sides to loosen the cakes. Invert onto racks and let cool completely.

    Duncan Hines yellow cake mix


    2 eggs


    1 stick butter


    1 tbsp. vanilla


    1 box powdered sugar


    1 pkg. cream cheese


    2 eggs


    1 tsp. vanilla





    Mix 2 eggs, butter and vanilla; will be thick. Pour in oblong pan, greased and floured. Mix powdered sugar, cream cheese, 2 eggs and teaspoon of vanilla. Pour on top of other mixture. Bake at 350 degrees for 50 to 55 minutes.





    VANILLA CHIFFON CAKE





    1 c. flour


    1/2 c. sugar


    1 1/2 tsp. baking powder


    1/4 tsp. salt


    4 eggs, separated


    1/4 c. oil


    1/4 c. water


    1 tsp. vanilla


    1/2 tsp. cream of tartar


    1/2 c. sugar





    Combine first 4 ingredients in small bowl. Make a well in center; add egg yolks and next 3 ingredients. Beat at high speed 5 minutes until smooth. Combine egg whites and cream of tartar in large bowl. Beat until soft peaks form. add 1/2 cup sugar, 2 tablespoons at a time. Beat 4 minutes at medium speed until stiff peaks. Pour egg yolk mix in a thin stream over egg whites; gently fold yolk mix into whites. Pour batter into ungreased tube pan. Spread evenly. Bake 375 degrees for 1 hour until it springs back. Remove from the oven. Invert the pan. Cool completely. Serves 16.

    1. 5 cups of all purpose flour (can substitute with wholewheat flour)

    By far the most surprisingly deeelightful cake. This recipe is great for adults and for kids ages 3 and up.


    1. Put your flour into mixing bowl, add cocoa, baking soda, vegan sugar and salt and mix well.





    2. Make three deep holes in the dry mixture. Into one, pour the oil, into the next, pour the vinegar into the next, pour the vanilla.





    3. Pour the water into the bowl, over all of this--- making a great big mess.





    4. Mix the wet and dry ingredients together until there aren't any more lumps and pour into a 9 inch by 9 inch baking pan, two inches deep, it doesn't even have to be greased.





    5. Bake at 350 for about half an hour, test with a fork.





    Enjoy this delicious cake. You will be surprised at its moistness and richness!!!!! It can be cooled and iced with your choice of icing or can be enjoyed on its own. The batter can also be used to make cupcakes!!

    CRUST:





    1 pkg. Duncan Hines Moist Deluxe Yellow Cake Mix


    1/4 c. butter, softened





    Combine and beat at low for 1 minute (will be crumbly). Put approximately 2 teaspoons mixture in each cake, don't press.





    FILLING:





    2 (8 oz.) pkgs. cream cheese (soft)


    3 eggs, beaten


    3/4 c. sugar


    1 tsp. vanilla





    Mix together until smooth. Spoon on crust and bake 20 to 25 minutes.





    TOPPING:





    1 1/2 c. sour cream


    1 c. sugar





    Mix and put on each and bake 5 minutes. Cool and top with cherry pie filling.





    DELICIOUS YELLOW CAKE





    1 box Duncan Hines moist deluxe butter recipe cake mix





    Mix and bake as directions on box. I use two 8 inch cake pans.





    1 lb. box or bag of light brown sugar


    1 c. canned cream





    Cook until it forms a soft ball in cold water.





    1 tbsp. vanilla





    Beat until it will spread easy. You may have some icing left. If so, put it on a dish the kids will love it.





    UPSIDE DOWN CAKE





    1/3 c. butter


    1/2 c. brown sugar


    1 #2-1/2 can pineapple or peaches


    1 sm. jar maraschino cherries


    1/4 lb. whole pecans


    1 can moist coconut (optional)





    Melt butter in 10 inch heavy skillet or 9 inch pan. Do not overheat. Sprinkle brown sugar over melted butter. Arrange canned fruit over the sugar mixture, filling the centers with maraschino cherries and filling in between the circles of fruit with pecans. Sprinkle moist coconut over all. If you use peaches, place cherry in center of each peach and lay cut side down. Fill in with nuts and cover with coconut. Pour cake batter over all.





    Cake Batter:


    2 eggs, beaten


    2/3 c. sugar


    6 tbsp. fruit juice


    1 tsp. vanilla


    1 c. cake flour (sift before measuring)


    1 tsp. baking powder


    1/4 tsp. salt





    Beat eggs until fluffy. Then add sugar and beat until thick and lemon colored. Beat fruit juice and vanilla all at once. Sift cake flour, baking powder and salt together and beat into egg mixture. When cake has baked, immediately turn upside down on serving plate. Keep pan on plate for a few minutes, so that the brown sugar mixture will run down over cake instead of sticking to pan. Serve warm or cold, though you may decide it tastes better served warm with plain or whipped cream. Serves 6 to 8. Bake at 350 degrees in preheated oven for 45 minutes.

    I don't know what you have at home to know what you can whip together quickly. If you have some pasta and tomato sauce, you'd be good to go in 20 minutes. You can roast veggies (potatoes, sweet potatoes, onions, carrots, parsnips, etc.) with garlic and Italian spices (just chop the veggies so they're bite-sized, add the minced garlic %26amp; spices, and roast in the oven at around 400 for about 20 minutes. You can add whatever veggies you like - asparagus, green beans, brussels sprouts, etc.


    If you have canned beans, you can cook them with a can of diced tomatoes; add cumin, garlic powder, chili powder, and salt and mash up for quick refried beans. We often have refrieds with guacamole and chips - a great quick meal. We also keep veggie dogs and veggie burgers in our freezer for a super-quick meal. I often make dishes in large quantities (chili, curries, etc.) and freeze them, so when I'm in a hurry, I just have to heat the food up.

    mix by hand or with a dough hook ,then just roll out and spread with tomato sauce and grated cheese or whatever toppings you like
    Go through you kitchen and see what you have. Experiment with combinations of foods that you wouldn't put together right away, like zucchini and apples.


    Take the things that you think will taste good together throw them all in a saute pan and cook some rice or tofu to go with it.





    Or you could tale the lazy way out and have spaghetti.
    I make a quick bean salad, just mix together 3 small tins of beans, (chick peas, kidney beans, butter beans or choose your own combo) and make a dressing with extra virgin olive oil, lemon juice, garlic and cracked black pepper, its delicious and very filling. You could also make a vegetable soup just make sure you add lots of beans at the end to fill you up.
    VEGETARIAN NACHOS





    1 bag Nacho Cheese Doritos


    1 cup shredded Colby cheese


    1 jar Pace Picante Sauce (chunky)


    1 jar jalepenos


    2 tbs. sour cream


    1 small can black olives





    Take about 20-25 chips and place onto a microwavable safe plate.


    Spread 1 cup Colby cheese onto the Doritos. Do not add sour cream until after heated. Heat in the microwave for 30 seconds to 1 minute (depending on microwave).





    Spread Pace Picante sauce on top of the melted cheese and Doritos. Garnish with 2 heaping tablespoons of sour cream, black olives, and jalepenos.





    Serve. Enjoy this fast and easy dish. It's a great meal at a cheap price for larger families. The kids will love it. Add lettuce or any other variety of ingredients to your liking.

    BEST MEATLOAF





    BASIC MIX:





    1 1/2 pounds ground beef


    1 c. fresh Italian style bread crumbs


    1/4 cup fresh parsley, chopped


    3-4 cloves garlic, finely minced


    1 large onion, finely chopped


    1 large green bell pepper, chopped


    1 egg


    1 1/2 teaspoon salt


    1/2 teaspoon garlic powder


    1/2 teaspoon onion powder


    1/4 teaspoon pepper


    1 8 oz can tomato sauce


    1 cup ketchup


    1/2 cup water or beef stock (can use bouillon)


    3 tbsp. Balsamic vinegar


    3 tbsp. brown sugar


    2 tbsp. Dijon mustard


    2 tsp. Worcestershire sauce


    1/4 c. Parmesan, grated (optional)





    In a small bowl, combine tomato sauce, ketchup, Balsamic vinegar, brown sugar, Dijon mustard, Worcestershire sauce, and water/beef stock.


    In a large bowl, combine beef, bread crumbs, onions, green bell pepper, parsley, chopped garlic, egg, seasonings, 3/4 cup of tomato mixture, and optionally, Parmesan cheese.





    Form into loaf. Place into shallow 7 by 10 in. pan or bread loaf tin, lightly oiled. Pour remaining liquid over meat loaf to coat. Bake in a 350 degrees Fahrenheit oven for one hour and 15 minutes, basting occasionally with ketchup or your favorite barbecue sauce.








    Optional Variations:





    Choose one:


    1. Eliminate salt, bouillon, and substitute 3 tablespoon onion soup mix. Sprinkle top with tomato soup and crushed crackers instead.





    2. Use old-fashioned rolled oats instead of bread crumbs.





    3. If you have leftover bread, especially Italian or French bread, substitute milk for the water listed in recipe, and soak about 2 cups bread in the milk prior to mixing into the meat mixture. Squeeze out the excess slightly before adding. Substitute this bread for the bread crumbs. After mixing everything together, you can also form this meat mixture into meatballs and fry in 1/2 inch olive oil in a heavy bottom skillet (such as cast iron). If making Italian meatballs, leave out the brown sugar and Dijon mustard, but be sure to use the Parmesan cheese. Season the oil in the pan with 2-3 whole cloves garlic (don't chop it up or it will burn instead of just roasting).





    4. If you're in a hurry, you may use as a substitute 2 cups of barbecue sauce and eliminate the following ingredients:








    1 c. ketchup


    1 8 oz can tomato sauce


    3 tbsp. balsamic vinegar


    3 tbsp. of brown sugar


    2 tbsp. Dijon mustard


    2 tsp. Worcestershire sauce








    5. Eliminate the saut茅 crumbs. Saut茅 this mixture with onion and garlic for 5 minutes and layer a casserole with no-cook lasagna noodles. Place meat mixture to cover noodles. Add a sprinkling of Parmesan cheese and:





    1/3 pound ricotta mixed with one egg


    1/4 c. freshly chopped Italian parsley or 1 c. fresh spinach


    1/2 pound grated mozzarella cheese








    Cover with another layer of noodles, and top with 1 large can of tomato sauce mixed with 1/2 teaspoon each basil and oregano. Place in 325 degree oven 60 minutes or until bubbly, basting occasionally with sauce to prevent lasagna from drying out.


    6. Form meat mixture into large doughnut shapes, approximately 6-7 inches across. When forming the doughnut, don't allow the center to actually become a doughnut hole; just thin it out, leaving a well in the center. Optionally, brush with ketchup. Crush 8-10 Saltine or Ritz crackers into crumbs and sprinkle over the doughnut shaped burger, concentrating the excess crumbs into the center. Sprinkle with onion and garlic powder and a liberal dose of soy sauce, allowing a 1/2 spoon or so to form in the well. This can optionally be topped with cheese and canned mushrooms if desired. Place in microwave and cook on high for 3 minutes or so, according to size, until the juices run clear and meat doughnut is done. Served with meat drippings as topping, there is no need for a bun. This is a fast and easy low-carb lunch!





    7. Place 3-4 strips of bacon lengthwise along the top of the meatloaf. Garnish with rings of green or red bell pepper and bake as usual. 8. Use your imagination, get creative, and enjoy!Any good recipes for meat loaf?

Might be steak sauce, salad dressing, barbeque sauce and whatever veggies I am in the mood for....I have tried them all even olives. And believe it or not it always turns out good. My family loves it and there is no way to tire of it because it NEVER EVER tastes the same twice.
    Here is a fast and easy recipe





    Equal parts ground beef, ground turkey , and ground buffalo/bison (this gives a lot of flavor but is still healthy, if you can't get bison/buffalo use half turkey and half beef)





    Add


    1/2 of an onion finely chopped


    1-2 eggs depending on size


    1 1/2 cup bread crumbs


    1/2 can French's Onion Rings


    1/4-1/2 of a bell pepper (depending on your taste)


    Two small splashes Worcesteshire


    1 cup Ketchup


    4 tablespoons Heinz 57 sauce


    Garlic salt


    Freshlly ground black pepper





    mix together by hand, divide in two and place each into a loaf pan.





    Cook 325 until pressure on top of loaf yields clear liquid. At that point put a light coating of either ketchup or romato sauce on top of loaf and return to oven for 5 minutes, or just until top begins to caramelize

    1 PREHEAT oven to 400掳F. Combine 3/4 cup of water and 4 Tbsp. of the soup in large bowl. Add meat, dry stuffing mix and eggs; mix lightly

    This is an amazing meatloaf recipe. I now find myself tripling it so I have enough. My daughter once drove 90 miles each way to have dinner one night and she doesn't like meatloaf!





    Cajun Meat Loaf


    Serving Size : 6





    -----SEASONING MIX-----





    2 Whole bay leaves


    1 teaspoon Salt


    1 teaspoon Ground cayenne pepper


    1 teaspoon Black pepper


    1/2 teaspoon White pepper


    1/2 teaspoon Ground cumin


    1/2 teaspoon Ground nutmeg





























    -----MAIN INGREDIENTS-----





    4 tablespoons Unsalted butter


    3/4 cup Finely chopped onions


    1/2 cup Green bell peppers -- chopped


    1/2 cup Celery - chopped


    1/4 cup Green onions -- finely chopped


    2 teaspoons Minced garlic


    1 tablespoon Tabasco sauce


    1 tablespoon Worcestershire sauce


    1/2 cup Evaporated milk


    1/2 cup Catsup


    1 1/2 pounds Ground beef


    1/2 pound Ground pork


    2 Eggs -- lightly beaten


    1 cup Very fine bread crumbs


    Combine the seasoning mix ingredients in a small bowl and set aside.


    Melt the butter in a 1-quart saucepan over medium heat. Add the onions, celery, bell peppers, green onions, garlic, tabasco, Worcestershire and seasoning mix. Saute until mixture starts sticking excessively, about 6 minutes, stirring occasionally and scraping the pan bottom well. Stir in the milk and catsup. Continue cooking for about 2 minutes, stirring occasionally. Remove from heat and allow mixture to cool to room temperature.


    Place the ground beef and pork in an ungreased 13x9-inch baking pan. Add the eggs, the cooked vegetable mixture and the bread crumbs, remove the bay leaves. Mix by hand until thoroughly combined. In the center of the pan, shape the mixture into a loaf that is about 1-1/2 inches high, 6 inches wide and 12 inches long. Bake uncovered at 350F for 25 minutes, then raise heat to 400F and continue cooking until done, about 35 minutes longer.


    Serve immediately as is or with Very Hot Cajun Sauce for Beef. This is best using both ground pork and ground beef, as the pork gives more flavor diversity. However, you can make it with ground beef only. From Paul Prudhomme's ';Louisiana Kitchen';

    Confetti Meat Loaf








    Ingredients


    1 lb. ground beef or ground turkey


    1/4 cup Corn, Black Bean Salsa


    1 tsp. Garlic Garlic鈩?


    1 Tbsp. Onion Onion鈩?


    1/2 tsp. Seasoned Salt


    1 egg


    2 Tbsp. ketchup


    1/2 cup unseasoned breadcrumbs


    2 Tbsp. Merlot Sauce





    Directions


    Combine first 8 ingredients. Place mixture in loaf pan. Bake at 350掳 for 40 minutes. Remove from oven; spread Merlot Sauce over top of meat loaf. Return to oven and cook for additional 10 minutes. Makes 4-5 servings.

    1 1/2 pounds ground beef, pork and veal mix from the butcher's counter (meatloaf mix)


    Salt and pepper


    1/2 cup Italian bread crumbs


    1 egg


    2 cloves garlic, minced


    1/4 small white onion, grated


    2 tablespoons golden or dark raisins, chopped


    3 tablespoons pine nuts, chopped


    3 tablespoons grated cheese, Parmigiano or Romano


    2 tablespoons chopped flat-leaf parsley


    1 cup arugula leaves or baby spinach


    6 slices prosciutto di Parma


    6 slices deli sliced provolone


    Extra-virgin olive oil, for drizzling


    1/2 pound cavatappi (corkscrew shaped hollow pasta) or rigatoni


    1 pound broccolini, trimmed into florets


    2 tablespoons butter


    1 cup ricotta cheese


    2 teaspoons lemon zest


    2 tablespoons chopped fresh thyme leaves


    12 grape or small vine tomatoes, halved








    Preheat oven to 450 degrees F.


    Put water on to boil for your pasta.





    Mix meat and next 10 ingredients as if you were making meatloaf. Flatten meat out on a waxed paper lined cookie sheet into a thin layer: 1/2-inch thick, 12 inches long by 6 to 8 inches wide. Cover meat with arugula or spinach, prosciutto and cheese then roll the meat, using the waxed paper to help roll up into a large log, , working across the 6 to 8-inch side, resulting in a 12-inch long log. Drizzle the log with extra-virgin olive oil to coat lightly.





    Roast meatroll 20 minutes. Cut into 1-inch slices, 3 pieces per portion, and serve. Make pasta while meat is in the oven.





    Salt water and cook off pasta, about 7 to 8 minutes to al dente, with a bite to it. Drain and return pasta to hot pot.





    While pasta cooks, place broccolini in 1-inch of water in a sauce pot and bring up to a boil. Add salt to the water and add the trimmed broccolini. Cover and cook 5 minutes, drain and reserve.





    To hot, cooked pasta add a drizzle of extra-virgin olive oil, butter, ricotta, lemon zest, thyme, broccolini and season with salt and pepper. Toss pasta to coat it in the cheese and butter. Season it with salt, to your taste. Portion pasta onto dinner plates alongside meat roll slices and top pasta with tomatoes and freshly ground pepper.
