www.about.com has some great recipes and the women who does the mexican recipes is amazing. All the ones I have used have turned out perfectly.

Also try http://www.allrecipes.com You can search by ingredients or by ingredients you don't want. They have some easy Mexican recipes, I don't know about Latin ones though.
