Brownie Pie
6 Tbsp.(3/4 stick) unsalted butter
3 1/4 cups (20 oz)semisweet chocolate chips
3 extra-large eggs
1 cup sugar
1 Tbsp. instant coffee granules
1/2 tsp pure vanilla extract
1/2 cup all-purpose flour
1/4 tsp baking powder
1/4 tsp kosher salt
1 cup (4 oz) chopped walnuts
2 to 3 Tbsp. heavy cream
Grease and flour a 9-inch tart or pie pan Preheat the oven to 350潞F.
Melt the butter in a bowl set over simmering water. Add 2 cups of the chocolate chips, remove from the heat, and stir until the chocolate melts. Set aside to cool completely.
In the bowl of an electric mixer fitted with the paddle attachment, beat the eggs, sugar, coffee, and vanilla on medium-high speed until light and fluffy, about 3 minutes. Stir in the cooled chocolate. In a medium bowl, combine the flour, baking powder, salt, 1 cup of the chocolate chips, and the walnuts. Fold the flour mixture into the batter until just combined. Pour into the pan and bake for 35 to 40 minutes, until the center is puffed (the top may crack). The inside will still be very soft. Cool to room temperature before removing the sides of the tart pan.
Melt the remaining 1/4 cup of chocolate chips with the heavy cream and drizzle on the tart.
Peach Melba Upside Down Cake
1/3 cup butter
1 cup light brown sugar, packed
28 (about 1 戮 lbs.) oz peaches, sliced
water
1 cup fresh raspberries
18.25 oz white cake mix
2 large eggs
3 Tablespoons vegetable oil
1. Melt butter in 13x9 cake pan -- Sprinkle brown sugar evenly on top.
2. Drain peaches, reserving peach syrup.
3. Add enough water to make 1 1/3 cups liquid -- set aside.
4. Scatter raspberries on top of peaches.
5. In a large mixing bowl, combine peach syrup mixture, cake mix, eggs and oil.
6. Beat on medium speed for 2 minutes.
7. Pour batter evenly over fruit.
8. Bake for 45-50 minutes or until a tester comes out clean.
9. Let cool in pan on a wire rack for 5 minutes, then turn upside down onto a large platter or cookie sheet.
****Note.canned peaches work best for this recipe because they keep their color and texture during baking. If you want evenly sized slices.buy peach halves and slice them yourself.

Crust:
6 tablespoons unsalted butter, melted
1 1/2 cups crushed graham cracker crumbs
2 tablespoons sugar
Pinch fine salt
Brownie:
8 tablespoons (1 stick) unsalted butter
4 ounces unsweetened chocolate, chopped
1 cup packed light brown sugar
3/4 cup white sugar
1 1/2 teaspoons pure vanilla extract
1/2 teaspoon fine salt
4 large cold eggs
1 cup all-purpose flour
Topping:
4 cups large marshmallows
Position a rack in the lower third of the oven and heat oven to 325 degrees F. Line an 8 by-8-inch square baking pan with foil so it hangs over the edges by about 1 inch.
For the crust: Lightly butter the foil with some of the melted butter. Stir the rest of the butter together with the crumbs, sugar, and salt in a medium bowl. Press the crumb mixture evenly over the bottom of the pan. Bake until golden brown, about 20 minutes.
Meanwhile, make the brownie. Put the butter and chocolate in a medium microwave safe bowl. Melt in the microwave on 75 percent power for 2 minutes. Stir, and microwave again until completely melted, about 2 minutes more. Alternatively, put the butter and chocolate in a heatproof bowl. Bring a saucepan filled with 1 inch or so of water to a very slow simmer; set the bowl on the pan without touching the water. Stir occasionally until melted. Stir the light brown and white sugars, vanilla and salt into the melted chocolate. Add the eggs and beat vigorously to make a thick and glossy batter. Add the flour and stir until just incorporated.
Pour batter into the prepared pan. Bake until the top is crispy and a toothpick inserted into the middle comes out mostly clean, with a few crumbs, about 40 to 45 minutes.
Remove from the oven and carefully position a rack about 6 inches from the broiler and preheat on low. Layer marshmallows across the top and toast under the broiler until golden, (keep an eye on it, it can go quick), about 2 minutes. Cool on a rack, gently removing the brownies from the pan using the aluminum flaps. Carefully separate any marshmallow from the foil and fold away. Cut into 12 (2-inch) squares.
Cinnamon Bun Coffee Cake
2 cups flour
1 1/4 cups sugar (add in more for a sweeter taste)
1 1/4 cups milk or half-and-half
1-2 teaspoon vanilla extract
3 teaspoons baking powder
1 pinch salt
1 large egg
TOPPING
1/2 cup brown sugar, more if desired
1-2 teaspoons cinnamon
1/4 cup melted butter
Directions
Preheat oven to 350 degrees F.
Prepare a greased 13 x 9-inch baking dish, or TWO 8 or 9-inch round cake pans (although the batter will seem like it will fit into only one 8 or 9-inch pan, this flop rises very high and will run over the sides if baked in just one pan).
In a bowl mix the 2 cups flour, 1-1/4 cups white sugar, milk, vanilla extract, baking powder, pinch of salt and egg until just combined careful not to overmix. Pour into prepared baking pan/s.
Generously spread brown sugar and cinnamon on top.
Drizzle melted butter over top.
Bake for 20-25 minutes
Notting Hill Brownies
2 cups unsalted butter, melted and cooled
2 cups granulated sugar
1 1/2 cups packed brown sugar
1 1/2 teaspoons vanilla extract
6 eggs
1 1/3 cups unsweetened cocoa powder
2 cups all purpose flour
3/8 teaspoon baking soda
1/2 teaspoon salt
2 cups chopped walnuts or pecans (optional)
Powdered sugar for dusting (optional)
Preheat the oven to 350. Spray a 9x13 inch baking pan lightly with non stick cooking spray Line the bottom with parchment paper. Line a baking sheet with parchment paper. Set aside.
In the bowl of an electric mixer fitted with the paddle attachment, combine the melted butter, granulated and brown sugars, vanilla, and eggs. Beat well on the lowest speed. In a medium bowl, hand whisk the cocoa, flour, baking soda, and salt together. Fold into the batter and blend well with the mixer, stopping once or twice to scrape the bottom of the bowl. Fold in the nuts. Pour into the prepare pan. Smooth the top with a wet knife or metal spatula.
Place the pan onto the prepared baking sheet and bake for 35 to 45 minutes, or until set and slightly firm, but not dry. Let cool completely on a wire rack, then freeze for 1 hour. Unmold and peel off the parchment paper. Cut into squares, roughly 2 1/2x2 1/2 inches. Wrap each in waxed paper and keep frozen or refrigerated. To serve for a party, piles the brownies onto a platter and dust with powdered sugar.
Variation: Skip the powdered sugar and drizzle the brownies with melted chocolate.Recipes................?

30 OREO, divided
1 pkg fudgy brownie mix
1/2 cup vegetable oil
1/4 cup water
2 eggs
1 1/2 cup mini marshmallows
1/3 cup m%26amp; m
Pre heat oven to 350
Put 22 cookies in bag and crush
Cut remaining cookies in to small pieces
Prepare brownie mix using oil, water, and eggs
Stir in crushed cookies
Pour into sprayed pizza pan
Bake 18- 20 min
Sprinkle top with marshmallows
Return to oven 1- 2 min
Remove pan from oven
Sprinkle cookie pieces and M%26amp;M over top
I like to melt a small amount of chcoclate and or vanilla frosting in the microwave.
Take a fork and drizzle the frostings over the top the of the pizza
Mayonnaise Cake
2 c. cake flour
1 c. sugar
4 t. cocoa
2 t. baking soda
3/4 c. mayonniase
1/4 t. salt
1 c. water
1 t. vanilla
Sift together dry ingredients, then add water, mayonnaise and vanilla and mix well. bake in 10x7 pan for 35-40 minutes at 350 degrees.
Whipped Cream Cake
1 1/2 c. cake flour
2 t. baking powder
1/4 t. salt
1 c. heavy cream
2 eggs
1 c. sugar
1 t. vanilla
Sift flour, measure and add baking powder, salt and sift again. Beat eggs until thick and lemon colored. Gradually beat in sugar, blend well and add vanilla. whip cream and fold into egg mixture. Fold in dry ingredients, sifting a little at a time, and foling only enough after each addition to blend thoroughly. Pour batter into a greased pan 8x8x2';. Spread with coconut, nut topping. Bake in 350 degrees for about 35 minutes.
Fruit Cocktail Cake
3/4 c. brown sugar
1/2 c. chopped nuts
1/2 t. salt
1 can fruit cocktail
1 c. flour
1 c. sugar
1 t. soda
1 egg
Sift flour, salt, and soda together. Add sugar, fruit cocktail (juice %26amp; all) and egg. Mix well and pour into ungreased 9x9'; pan/tin. Spring top with brown sugar %26amp; nuts. Bake in 350 degrees oven for 45-60 minutes. Top with whipped cream and serve. Makes 8 servings. This dessert is best when baked not more than 3-4 hours before serving.
Strawberry Punch Bowl Cake
1 box yellow cake mix
1 (6oz) pkg instant vanilla pudding mix
1 med. can crushed pineapple, drained
2 (10oz) pkgs frozen strawberries or fresh strawberries, sliced %26amp; sugared
2 bananas, sliced
1 (12oz) carton cool-whip
pecans
Bake cake in 2 round cake pans, according to package directions. cook %26amp; refrigerate to chill. cut 1 layer into small pieces and place in a punch bowl. mix pudding according to package directions. spread 1/2 of the pudding on top. Add 1/2 of the strawberries, put layer of pineapple and 1 sliced banana (put banana in pineapple juice for a second to keep from turning.) Spread 1/2 cool whip on top. Repeat layers again, starting with cake %26amp; ending with cool whip. Add chopped pecans on top. Chill overnight.
Heath Bar Carmel Cake
1 German Chocolate Cake MIx.
Bake cake mix according to directions. Poke holes in cake and pour or drizzle in the holes:
1 can sweetened condensed milk and one jar caramel topping. topped with whipped cream %26amp; crushed heath bars.

1 yellow cake mix (cut in half long ways
Filling:
5 T. Flour (combine in sauce pan)
1 c. milk (combine in sauce pan)
boil until thick, cool
Combine in large bowl:
1 c. sugar
1/2 t salt
1/2 c Crisco
1/2 c. margarine
1 t. vanilla
Mix with mixer until fluffy. Then combine with cooled filling mixture.
