I have a great recipe for you, called ';Sassy Chicken Salad.'; :) I found it on a card in the packaging of the canned chunk chicken breast sold at Costco.
I love this recipe because it's super easy to make, the cost is very reasonable, it tastes delicious %26amp; refreshing, and it's very healthy. It doesn't even involve cooking, which is one of the reasons I like it. *chuckle* I hope you do too.
SASSY CHICKEN SALAD
1 can (10 oz.) diced tomatoes %26amp; green chiles (drained)
1/2 cup light/reduced fat mayonnaise
1 tablespoon honey
1 can (12.5 oz.) chunk chicken breast (I use Kirkland, the Costco in-house brand)
1 cup celery, thinly sliced
1 cup grapes, halved (any grape type is fine)
1/3 cup toasted pecans, chopped
In medium bowl, combine tomatos %26amp; chiles, mayo and honey. Then stir in chix, celery, grapes %26amp; pecans. Cover and chill. Serves approx. 6.Does any one have an tasty healthy recipes?

Fruity Morning shakes
Equipment:
鈥?measuring cups %26amp; spoons
鈥?cutting board
鈥?small, sharp knife
鈥?electric blender
鈥?1 or 2 tall glasses
Ingredients:
鈥? container (8 ounces) vanilla yogurt
鈥?2 teaspoons sugar
鈥?6 strawberries, stems cut off
OR
鈥?1 small ripe peach, pit removed and cut into chunks
OR
鈥?1 cup blueberries
鈥?ice cubes (optional)
Directions:
1. Put yogurt and sugar into the container of the electric blender. Add your choice of fruit.
2. Put the lid securely on the blender and turn it on to high speed. Blend until thick and smooth.
3. Fill 1 or 2 glasses with ice cubes, if you want your shake frostier, and pour the shake into the glass(es). Serve immediately

Veggie wraps
Equipment:
鈥?measuring cups %26amp; spoons
鈥?cutting board
鈥?vegetable peeler
鈥?sharp knife
鈥?table knife
Ingredients:
鈥?2 large flour tortillas each 9 inches in diameter
鈥?6 tablespoons cream cheese, at room temperature
鈥?1/2 small cucumber, peeled thinly and sliced
鈥?1 tomato , thinly sliced
鈥?1 cup alfalfa sprouts
鈥?salt and pepper
Directions:
1. Lay the tortillas on a work surface. Using the table knife, spread 3 tablespoons of the cream cheese over each
tortilla.
2. Divide the cucumber slices in half and arrange one-half of the slices on top of the cheese on each tortilla. Press down gently. Divide the tomato slices in half and arrange them on top of the cucumber. Divide the alfalfa sprouts in half and sprinkle them over the tomato. Sprinkle with salt and pepper.
3. Working with 1 tortilla at a time, fold about 2 inches of the right edge over onto itself. Press gently. Fold over same amount on the opposite edge. Again press gently. You will have 2 straight sides and 2 rounded ones. Beggining with the rounded side closest to you, roll up the layered tortilla and vegetables, holding the folded edges down with your fingers as you roll. Repeat with second tortilla.
4. Place the wraps, seam side down, on the cutting board and cut in half on the diagonal with sharp knife, Serve immedeatley.

This site is awesome. This will give you entrees, sides, breads, and even desserts that are healthy. I figured I would just give you a site so that you can search for your favorites yourself.
Here's something really good and easy
8oz chicken grilled sprinkled with al purpose seasoning
1oz chedder cheese
1 tablespoon mild salsa
1 whole wheat tortilla
1/2 cup of black beans
and 1 cup watermelon
I always cut up the chicken after its cooked and top it of with the cheese and salsa.
